不只是這裡的醃李子如此,其他如鹽醃蘿蔔乾、四川泡菜都是又軟又脆

Wood ash is alkaline, which can soften plums and make it easier to separate the natural pigments of plums. We all wash with water, which basically won't harm the skin!

I presume it's wood ash from non toxic woods. Like, you wouldn't use the ashes of Yews, but oak, maple, hickory, fruit tree wood, etc.
