Something that I'd like to know that i can't find information for anywhere - how do you know who speaks Xhosa? I'm worried I try speaking Xhosa with a Zulu speaking person and they become offended 😅 any advice?

They will still understand you if they are ZULU. If they feel offended they are just stuck up.
