Thanks for your questions! The reason of not using the knot is that the fabric can be used on both sides instead of just one. For example, if I make a knot on one side of a coaster, I cannot use that side for a cup or a glass as the knots would make the glass unstable. However, if I plan to cover the back side, I will use knots. I hope this helps!
