Also here’s a thing with Dojima: he’s a teacher. Yeah he mainly runs the stuff for the Totsuki’s branch of hotels, but he’s still an educator technically. So he wanted this to be a teaching moment for all three

Shinomiya's biggest problem is he took things too far - he was justified in tightening down controls, but it ultimately led to stifling not only his employees' creativity, but his own. And that might be my favorite thing about this episode -that the shokugeki that Gin forced him to participate in, while it also served as a redemption for Megumi, was also an object lesson for Shinomiya.

Dojima basically called Shinomiya out in that he has stagnated, hence he is in a "rut". And as a chef or any job that requires as much creativity as cooking does, stagnation is a death sentence because if you are not moving forward, people are going to move ahead of you at some point.

By "rut", it means Shinomiya is having some sort of creator's block.
He's stagnating because of stress in France and it's affecting his business.
Shit, even famous chefs today like Gordon Ramsey ain't doing so hot in the business.

This is what I like about this show.
1. Shinomiya was flawed. Not only is he a former first seat of the elite 10 (basicly meaning in his generation, he was litterally the no.1 at the academy), he is also basicly a pro with his own successful resturaunt. Yet, he still had some flaws, he wasn't perfect.
2. Megumi goes from someone just simply relying on others and starts to become her own character. Till now, she has been Soma's little follower, following his style. Now she is actually getting her own
3. Soma losing. OP mc's aren't always fun, it's not fun to see them only win, even if it was hard fought battles. Soma was over his level here, he wasn't just some kid who waltzed up to a pro and beat them with ease.

As a chef, you must have creativity in your mind since making food wasn’t that simple depend on what you focus on. If you didn’t make new thing during your journey or make new food into your menu, the customers eventually got bored and leave so only have the same food in the menu without any further improvement and changing will kill a chef

Also for Soma it’s the first person he’s lost to who is not his dad, so it shows him that he’s still got a ways to go to reach his goal.
