Uppu Nellikai Amla pickle in brine 2

  • This video gives the recipe for preparing amlas pickle in brine. This pickle uses green chillies, ginger and Lemon juice along with salt and oil.It is simple and easy to make .
    Ingredients
    Amla/gooseberry 1/2 kg
    water 3 cups
    Salt 1/4 cup
    Haldi/turmeric powder 1 Tsp
    Lemons 2 -4(juice)(use more for longer shelf life)
    Green chillies 4-5
    Ginger 1 " piece peeled and cut
    Oil 2 -4Tbsp (sesame/til oil)(use more for longer shelf life)

    Love your recipes. Can I use sunflower or any other sweet oil for the pickle recipe instead of til oil....as I do not use this oil

    I saw some one selling this on FB for RS 450 (500gms) and I was tempted to order it ,but I thought about you and checked whether you had shared this recipe and Lo and behold you have..Now I can learn to make this immunity boosting pickle. Thanks for sharing such traditional recipes in such a simple manner.And all the traffic sounds that come during your videos make everything real and relatable.😊

    Can this be stored for a year outside as as have got a good crop of it in our backyard.For a kg how much gram of salt would be neede to extend shelf life?
    Awesome preparation especially about adding oil in brine.

      You can add about 1/2 cup salt to it and 1 l water. I prefer storing in the fridge for longer shelflife

    I also do like that but after some days one black layer on the water nd gooseberry s are very soft not able to pick by spoon .what is the problem becoz we like very much.pl clear

      That is a layer of fungal growth.. You can keep it in the fridge for better shelf life

    Hello Gitaji, I had prepared nellikai in brine as explained by you . This was sometime in March'2020. Happy to say that it has remained unspoilt so far.It has been kept outside.. Have been using this from time to time mostly for arachu kallaki. Yesterday I prepared a new batch . Thank you so much for this wonderful method. Could the salt quantity be reduced?

      You could possibly dilute it a little, or else you can wash the nellikai after removing from brine

      The amlas have to continue soaking in the water. The leftover water tastes good with curd rice too!
