My friend is perfecting her own genetic breed of cattle here in Texas and they are a combination of Wagu,Charolais,and Angus. They are delicious!!!!🥩🍔🌮🫔😋❤
I prefer ribeye as well, but tbh, I never feel bad about having a nice New York Strip either.

I have cooked thousands of steaks. I love a really good King cut of medium rare prime rib, also I love a good porterhouse or T-bone, filet mignon is always good and so is a good New York strip. Never use steak sauce but a little side of au jus is always good for enhancement. ❤🇺🇸🙏🏻👍🏻

I want to suggest for the bottom crust you try "Blind baking" it to keep it from being soggy.
Ribeye and NY strip are my favorite cuts, personally. I usually go with medium. I know chefs always say medium rare or rare for certain cuts but if it’s rare at all it messes my guts up and my poor body can’t digest it 😂
Have it how you like it, after all you are the one that will be eating it 😉
y'all are so lucky to be able to experience F1 steaks....I always go for black angus beef & little marbling & fat....I've grilled some steaks & I've smoked some steaks....I actually did put a tomahawk in a cast iron skillet & put it in my smoker before & it was definitely one of the best things ever

President Eisenhower used to throw his steaks directly on the coals at the White House just for the shock value to visitors. Get a lot of coals really hot and use a hairdryer to blow excess ash off and increase the heat and BAM! Great video as always; nice to see you and I hope you are well. Warmest wishes!

NY Strip is my go to. I enjoy the flavor more than Ribeyes. I've tried both many times and strips just win out for my tastes.

I'm not a fan of filet either, my usual go to is NY strip but recently I found a local shop that can cut choice grade sirloin and that's pretty good too

I never put meat on the embers of my firepit because my wood was from my fruit tree trimmings dried in a pile and well, tomcats. A cast iron skillet works fine plunked down on coals.
chuck eye is a close alternative for rib eye. a tad fattier but still delicious

My preferred cut is the porterhouse. If it completely covers the plate and even hangs over the sides a bit, all the better. I want one with a good size tenderloin side to it as well as the strip side. Oh, yeah!

I don't know the "Heritage" of SnakeRiver but what I do know and swear to is they are not that thin, AND most of all - they do have "Cap of Ribeye" lol But he is right with you don't want to smother it with spices and other stuff!!! Not till 'later' should you do that. Me and my wife has settled on: Salt, peper, Worcestershire sauce, garlic powder, onion powder and olive oil. Gas grill up high ~600; what about 3 min per side...

You'd be wrong. Wagyu fat is actually nowhere near as bad for you as normal beef fat. It actually even has some health benefits to it. It's a totally different beast.

I was actually wondering at first when he said it's a hybrid of wagyu if you were using the typical "wangus" beef. Wagyu + Angus. It appears you were using Wagstein? Holstyu? I'm not sure of the official nomenclature for that particular hybrid. I just know the one for the Wagyu Angus hybrid which always sounds funny. Get some and ask your neighbors if they want to come over to your flat for some grilled wangus and see how they react.

I’ve always been taught to salt the steaks and let them stand in the fridge for at least 4 hours on an elevated rack to draw the moisture out of the meat. Are you not doing this because you are first smoking the meat?

I put steak on the coals once. I didn't like doing it that way, so I put my cast iron skillet on the coals upside down and sear on the bottom of the skillet.

I wouldn’t reverse sear steaks that thin. Just sear them first, rest, and then see if they need any more heat after they finish carryover cooking.

Ruined those steaks when you smoked them.
A steak is grilled, not barbecued. Barbecue, or BBQ, is not an adjective or a verb. And when meat is grilled and served, it is not barbecue. It is grilled meat. If it is slow smoked with indirect heat, then it is called barbecue. I know it is confusing. But just remember that the word "barbecue" or the shortened slang "BBQ" is not ever anything but a noun referring to a slow smoked meat. As the inventors of such we insist on educating others about what is what. Sorry! It must be done. Take solace in the knowledge that millions of Americans, nearly all northerners, cannot get it right either!

@@spacehonky6315 Exactly. Heat is heat. Smoke, open fire, cast iron, doesn't matter. Cooking it slow and then searing at the end is perfectly fine.
