its a nola thing we make ours down home waaaaay different we like and rather the papers we chew it up with all tht good juice and mom use to always get hormel’s tamale’s in a can when we were kids or we would to manuel’s tamale truck maaaaan the best days ever sitting out on the porch at night with our little to go foam container with the saltines and coke soda and pig lips i mean the works and the whole we gettn ate up by dem damn mosquitos we eat a tamale smack a mosquito it was like playing wacka mo but those tamales were worth it every bite and the tamales as well lol
First time I seen tamales made this way. Looks way easier.. I think leave the cayenne pepper n tomatoes sauce out n fire roast on a charcoal n wood grill some green chili n jalapenos, n tomatoes, and sear the onions first. N blend n add to ur meat..

I use my electric sausage maker to make these. Consistent size and fast. With 3 different size nozzles, you can choose the size you want.
