Glad I found this....the instructions were about what I've learned on other videos, with little more than "salt and pepper" steak, hot oil, hot oven to finish off cooking. BUT...WHAT I DID NOTICE and was impressed by were the chef's COMMENTS on hot pan from the oven, caution/care after cooking, etc. THESE are important, and SO OFTEN overlooked, and FORGOTTEN by people cooking at home!! So, thank you, for the relevant reminder, regarding towel covering handles, pan heat from the oven, and precautionary steps...so no one is hurt! Nothing ruins a great steak, more than a Third Degree BURN because someone was not being cautious!

you can also coat the steak in olive oil instead of the pan. It prevents you from getting splashed by hot oil and helps the seasoning stick to the meat
your advice on covering the pan with a cloth is priceless. i burnt my right hand last week and completely destroyed the palm of my left hand just yesterday!! now i will always cover the pan and i will always think of your video!!! ;)
I've done steaks this way many times, and this will get you that beautiful steakhouse taste. One suggestion is use a cast iron skillet in lieu of the typical stainless, they just hold heat so well, and are perfect for searing.
You're right. I've tried just about every way there is to cook a steak. My favorite is over coals with open flame. Charred black around the edges, warm center but still a little bloody.
I was disappointed that you didn't show us the inside of the steak. Also, I don't think testing the doneness of a steak by feel is totally accurate - it's too dependent on the quality and cut of the meat (not to mention the experience of the person doing it.) Using a meat thermometer is the only way to be sure.

This is probably not how I would personally cook my steak because I like pure pan-frying more and I dont get access to a large oven. However, I gotta say I really really like the little extra details and tips he threw in from time to time. Make sure you turn on the fan first, make sure you got your pan handle covered up after you take it out from the oven. Just overall great stuff.
Agreed, personally salt well, very hot cast iron (I don't put pepper on until it's resting because the high heat tends to make pepper somewhat arid) & brush with clarified garlic butter on while it rests & boom.

This works pretty well for me, but for people who live in apartment buildings and are constantly under threat of setting off the building fire alarm, I'm thinking an oil that has a higher smoke point (like avocado) might be easier to deal with. Haven't tried it yet but my last steak was a nightmare (but came out great)!

cast iron > everything else, especially if youre going to use the oven. needs more salt. 5 mins in the oven at 400 degrees usually gets me a perfect medium rare. 550 is way too high. Hell, it only takes 10 mins fully cooked to a medium rare, with searing on a cast iron.

It's all about the char (to lock in juice; I also like it for texture contrast to the soft center), letting it rest, and cutting it AGAINST the grain. Imo

Thats because it is well done. He did so many things wrong there. First off dont put your oven at 550. Thats waaaaaay to high. Supposed to set it somewhere around 250 and let it slowly cook on the inside. U do have to sear it first like he did but dont move it around as much as he did. Just leave it alone. Secondly dont use olive oil...use canola. Also let it rest for 10 mins not 4 or 5.

I can't stand eating it when it's too pink inside, it doesn't tasted very good to me. To some people well-done is overcooked, in my opinion, rare to medium rare is under cooked. I can tolerate medium, to well-done, but well-done is what I prefer.

I have cooked a lot of steaks in my time and my method is 3 to 4 min med rare 5 to 6 done or well done or there about .... Some steaks really benefit from time in the oven, especially if they're very thick like his was. When I cook a double-thick strip loin like that, the sear will turn black to char before it reaches the internal temp I want. Sticking it in the oven finishes the cooking more evenly and gently and let's me have the sear I want on the outside and the gentle med-rare I want in the center. If you're hitting a happy temp on the stove, you've got nothing to worry about. If you find that your steak is over cooked outside before it's done on the inside, then consider using your oven. :)

no way in hell you can sear that steak then put into an oven for that long and still get medium rare. The steak is definitely cooked to shit and grey in the middle that's why there's no shot of it being cut open. With steaks of that size, searing alone can get to medium rare.

SirMuttonChops DCUO With a steak that thin, the pan searing alone would have cooked it to temperature. Oven doesn't even come to play here, all it does is over cook the steak. If the oven method works for you, then you must have a thicker, nicer piece of steak than this guy.
You can, but it is tricky! Best advice after searing, put it in aluminum foil loosely for 9 - 10 minutes. The meat is still cooking, that is why you let it rest.

Its more to show a technique to get you close to how its done in steakhouses using a pan and your oven (yes, steakhouses use much more than salt and pepper). This method + any combination of seasoning will certainly give you good results!

I always think the same thing when I watch videos. Most people do that same mistake. You can't blame them tho because even chefs like Gordon Ramsey tell them to do it that way. They should listen to better chefs like Heston Blumenthal. Before fanboys start ragging on me about Gordon, he's the same guy who perpetuates the myth that putting salt in your boiling water before cooking potatoes, pasta, etc, will actually make the water reach its boiling point faster.
MrBeatboxmasta I realize it doesnt lower the boiling point....technically doesnt it raise the boiling point slightly so food will cook slightly faster (almost un-noticeably faster...but faster non the less) If im cooking something low and slow...ill throw the pepper on before with the salt, but if im cooking at high temp, i put it on just after im done so it doesnt burn the pepper (I try to roast the pepper corns just before I use them if im cooking for guests....so throwing them on a searing pan would torch the shit out of them)

I like ATK's reverse searing. Slow cook a large steak at 250 for an hour THEN pan sear.
Awesome method. You can do it sous vide too to an ideal 136 THEN pan sear in some garlic/herb brown butter. (Literally foolproof)

ok brother,, I checked out you steak cookin vid and it was pretty good and spot on , ,just I have never understood one thing. Why do folks insist on putting steaks in the oven? I have cooked a lot of steaks in my time and my method is 3 to 4 min med rare 5 to 6 done or well done or there about .... That has NEVER failed me, even drunk,, I must be missin something with the oven

Some steaks really benefit from time in the oven, especially if they're very thick like his was.
When I cook a double-thick strip loin like that, the sear will turn black to char before it reaches the internal temp I want. Sticking it in the oven finishes the cooking more evenly and gently and let's me have the sear I want on the outside and the gentle med-rare I want in the center.
If you're hitting a happy temp on the stove, you've got nothing to worry about. If you find that your steak is over cooked outside before it's done on the inside, then consider using your oven. :)

no way in hell you can sear that steak then put into an oven for that long and still get medium rare. The steak is definitely cooked to shit and grey in the middle that's why there's no shot of it being cut open. With steaks of that size, searing alone can get to medium rare.
+Arsène Lupin agreed, I cook mine all the way in pan only, 1.5 inch cut, 4.5 min each side..........PERFECT! lotta smoke, but great crust and delicious! I also throw a pat of butter in at the end and spoon over steak before a I plate it!

It depends on the temperature in your oven. I usually cook mine for 8 minutes, at 450, and it turns out nice and medium rare.

With a steak that thin, the pan searing alone would have cooked it to temperature. Oven doesn't even come to play here, all it does is over cook the steak. If the oven method works for you, then you must have a thicker, nicer piece of steak than this guy.
You can, but it is tricky! Best advice after searing, put it in aluminum foil loosely for 9 - 10 minutes. The meat is still cooking, that is why you let it rest.

This certainly isn't the 'best' or 'only' way to cook a steak... Its more to show a technique to get you close to how its done in steakhouses using a pan and your oven (yes, steakhouses use much more than salt and pepper). This method + any combination of seasoning will certainly give you good results!

I always think the same thing when I watch videos. Most people do that same mistake. You can't blame them tho because even chefs like Gordon Ramsey tell them to do it that way. They should listen to better chefs like Heston Blumenthal.
Before fanboys start ragging on me about Gordon, he's the same guy who perpetuates the myth that putting salt in your boiling water before cooking potatoes, pasta, etc, will actually make the water reach its boiling point faster.
Pepper...I agree...Olive oil...I've been using for years. It's not an issue....works well.

I realize it doesnt lower the boiling point....technically doesnt it raise the boiling point slightly so food will cook slightly faster (almost un-noticeably faster...but faster non the less)
If im cooking something low and slow...ill throw the pepper on before with the salt, but if im cooking at high temp, i put it on just after im done so it doesnt burn the pepper (I try to roast the pepper corns just before I use them if im cooking for guests....so throwing them on a searing pan would torch the shit out of them)
