I use B&B lump charcoal 270-300 degrees spritz every 45 minutes spare ribs trimmed to St. Louis cut 9 ribs. The PBC hanging system sits reading high so the bottom of the ribs are about a foot from the coals. I hang them from the thick end at least 2 or 3 ribs down. 3 hours and there done. Sauce and set for 5 minutes. Don't cook it to long then you get "fall of the bone". I call that "into the ashes" LOL. Hope that helps.
I move them around if necessary when I spritz last night I didn't but when I set the sauce I look for the hottest spot in the coals, so I can do in and out in a hurry.

Try sealing the rolls w a beaten egg instead of water. This is how I learned when I was little, it also gives a little extra flavor.
