The Mesmerizing Way Steam Rice Rolls Are Made | NYT Cooking

- Follow along as Joe Rong, the owner and chef behind Joe’s Steam Rice Roll, shows us the mesmerizing process for making the Cantonese-style cheong fun he serves at his New York restaurants. Joe, who came to New York as a teenager, opened his first stand in 2017, and he’s opened more locations since. Two electric stone mills that Joe brought with him from China grind rice on-site - 50 to 75 pounds are milled every day - which is then added to a batter for the noodles. The batter is then steamed and rolled with other ingredients. The result? A steamy plate with springy noodles at its center and a satisfying meal.
This video was filmed in March of 2020, before the coronavirus shutdown.

About NYT Cooking:
All the food that’s fit to eat (yes, it’s an official New York Times production). Хобби
"Are yours better? No" I love that he has the humility to say that his aren't the best. That's rare in a chef.
Very rare
Right, I loved that about him. Definately on my list for when I visit NYC next.
That’s an Asian mindset
Agreed! I’d love to try this restaurant
@@thihal123 Me too! As soon as this pandemic is over, I'm hitting NYC! :D
He makes his own flour liquid from actual rice, that's dedication right there. He could have just taken the short cut and buy the flour straight from a vendor.
Well there’s nothing wrong with that too
@@organizedchaos4559 it would not taste the same. Needs to be made fresh like that. That's how it's done authentically.
I would kill for that plate with the curry fish balls and peanut sauce, ohmg that looks so delicious. And impossible for me to be able to re-create at home! I hope Joe is able to reopen soon!
Same here. Looks so good! 😋😋😋
I knoooooowwww. So tender and saucy and piping hot.
Agreed, I was instantly imagining the smell of that meal and wanted to swoon at its beauty.
There are food that are meant to be eaten outside and this is a classic case. and his version is really a modernized one.
The ending made me cry. I know it's hard for small businesses to stay afloat during these times and his optimism is so inspiring. Thank you for a great video!
I was tearing up, too. And before they cut to that last bit really hoping we were going to hear he's still in business!
Yet you still buy from Amazon.
@@brucef310 how tf you know if this person buys from amazon
@@AlexaSmith prove that they don't.
joe's humility and drive to improve are inspiring.
Right?? 👍
Yes, such a lovely human being, and the rolls look so dang yummy.
Absolutely.🤗
For those who are curious, the rice noodle rolls with peanut sauce is a Hong Kong street food version. They usually don’t come with fillings (cheaper to make and buy) so the sauces (peanut/sesame, soy, chili oil) makes up for flavor. Fish balls are also very famous street food that are usually sold at the same vendor and eaten together.
OMG I've never wanted to eat something out of a food video so much
When it's fresh, it's so luscious. It's has a very smooth and silky texture in the mouth, and with the sauce they pour on, oh boy, is it delicious. It's the dish of my childhood dreams :(
This is my favourite part of dim sum, and I get so sad when a place doesn't have it that day. Definitely try it if you get the chance
@@jennyng2994 I am tempted to hop in my car and drive from Baltimore just to eat it. OMG.
The Stuff looks good AF!
He's gona diversify & open his restaurants to Uber Eats or any one or 2 of those
takeout & delivery strategies, because if we are from all around the world, & are eating THIS with our eyes!
Imagine ANYBODY with $50 on Friday Night, 3pm,3am ...etc once its a perfect bite size item for takeout!
Having eaten at the one in canal street market a few times it's def worth it.
It's great to hear his business is still around, even if one of the locations had to close. I hope he's able to get to visit his family again soon, and if I end up in NY I'll definitely be making a stop at one of his shops!
there are many decent Dim Sum restaurants in southern CA, so I'm lucky. The simple version are also available at the local Chinese supermarket. I think you might be able to order the quick version of these rice noodle from the Chinese online groceries site, I think it's called "yumbuy"
Here's hoping you can visit your family again soon, my dude.
Some friggin artisanal rice rolls here!
I’m from London and Joe’s Steam Rice Rolls was one of my top priority places to visit when we made the trip to NY in Jan2019. Glad to see he’s still pushing through these tough times and hope to get that taste of home again soon.
I desperately want to eat one or five of these right now.
I am literally drooling here. Cheung fun is one of my favourite dishes.
Given the way the cheong fun carts are practically assaulted when they venture out of the kitchen at the dim sum restaurants I've been too, I'm not surprised you could base an entire restaurant around them.
I like Joe. That's the kind of business that I want to support.
Just had stream rice rolls and jianbing from Joe's UWS location a week ago. So good! They has people eating outside and a few takeout's while I was there. I hope they can last through all of this and keep the locations open.
Thank God
I've been living in Guangdong for almost 10 years. this guy and his changfen are super legit and authentic. if anything, it's probably even better than what you can get in most places out here. he's making his own rice flour!! I'm sure it's amazing! I'm definitely going to visit next time I'm home (I'm from NJ)
One of my favorite foods for sure. I'm used to Vietnamese Style (it's covered in Nước mắm, what's not to like), and there's a few restaurants that specialize in it in Cali. I could eat it all day.
Is “Cali” - California?
Anything in San Diego or LA? Or anywhere on the west coast?
Just google "Banh Cuon" Vietnamese Restaurant.
Yup, absolutely love banh cuon. It's for sure also in my top 3 vietnamese dishes I grew up eating. My mom makes it everytime I come home!
I start this video hungry and ended it teary eyed. I hope I get to try these rolls one day, and I hope Joe get to see his family soon!
Same here including ended it teary
He is sucha humble person, very refreshing
Thanks so much for showing us where he's at now. I'd eat this all day...so glad you're still here!
The food looked really good! But also thank you for doing your due diligence and giving us an update! Much appreciated, hope to visit one day.
What a humble, honest, and inspiring chef. If I was nearby I’d eat there every week to support his business
these rice rolls are delicious! if you're near one of his shops, highly recommend that you try them!
Mad respect for the tradition that Joe maintains. My dad often talks about how all the new technology takes away from the taste and he hates the powder lol. Wish there was one in Houston. Good luck. If you are in NY, please support.
Used to eat this at Dim Sum shop (in Malaysia when young) and has seen how it is done whenever an order is placed at the “station” .. soft fine textured fragrant sweet savory steamed rice pancakes cooked right in front of me and literally “melts” in the mouth or into the stomach . I thought it was magical (still is). But have not seen this anywhere today or for a long time. Could not even explain to my son how it is made. All I get are pancakes served by waiters taken from somewhere , texture mostly thick and warm instead of thin, soft and hot. Guess what? I shared this link excitedly to my son immediately . Thank you 🥰
This sounds like the perfect place for me ❤️
I hope I’ll have the chance to visit this humble and hardworking man one day!
delicious... fondest memories of childhood and growing up is having cheong fun with family...
This was wonderful. Thank you NYT and wishing all the best to every small business owner
many blessings to you Joe Rong & your family!
This is hands down my favorite Chinese dish! I first had it when I was on a student exchange in Guangzhou in the schools cafeteria and it was heaven in my mouth 😍 the texture, the flavor everything was brilliant!
I ate there, and this is the best steamed rice/egg roll I have ever had in my life. This is a must-eat place in NYC.
What a beautiful video. This looks delicious and Joe is an inspiration.
Looks so good! Great business highlight video. We need them now more than ever.
I can't wait to check this out when I return to NYC. Gotta support these small businesses and DAMN those rice rolls look so legit. Keep strong, Joe!
I had this about two weeks ago, so inexpensive for such good food
You should try it in Malaysia. Best with Char Siew pork or Prawns
@@chanwinsern8814 But then you have to be in Malaysia...
How much was it?
That looks soooooo delicious. People like Joe make me American proud. I truly hope his businesses survive this horrible time....especially cuz I’ll be seeking one out to try on my next visit! 😁🥡🥢
I grew up eating steamed rice rolls. Joe's looks totally awesome.
Moving to NY for sure. ❤❤❤
I am so glad we have him in New York. Joe's Steam Rice Roll is the best!!!!
I can't wait to get back out there and try Joe's food, looks amazing!
It's on my list of places to eat next time I am in NY. Looks amazing. Lots of respect for humility, determination and drive for quality
If I ever make it back to New York, this is what I want to eat.
Dreams/goals like that keep me going during this pandemic.
Hope your business will be thriving again soon.
One of my favorite resturants. Can't wait to go back.
Very touching video! Thank you!!
What a sweet and humble man.
One of my late father's favorite snack.
Joe takes a simple dish and makes it gourmet! Pls wait for my visit to NYC ... one day.
Loved eating this during my childhood and still love it everytime I have the pleasure of eating it
This looks so good! I can't wait to get to NYC and try it! When we were young kids eating these at dim sum restaurants we called it slimy noodles. They were our favorite of all the dishes. And to think they were just beef or shrimp. So basic but we loved it so much. I think they are the favorite of most kids/people! Good luck to Joe! Keep going!
He's so charming! It would be an honor to try those rolls and I very much hope to do so in the future.
I’m glad that he still has restaurants open again. Next time I’m in NYC, I’ll definitely stop by!
had these last week in the UWS store (Amsterdam Ave btwn W81 & W80th street). They are as delicious as you imagine them to be. So glad he made it and that the store seems to be doing well!
I imagine these feel like literal heaven in your mouth. That soft, stuffed savoriness.. 🤤🥺
Good luck Joe! Wish I could try some of your food! 💕
One of my favorite dishes of all time...I could eat it all day. You can literally put whatever meat or toppings inside and it'll taste just as good.
I've loved this place since the first time I stumbled upon the shop. They had just opened too so I feel privileged that I was there in the beginning
If you're ever in NYC, you gotta try this. I'm not even from there. They're so yummy and filling. Much love for Joe's Steam Rice Rolls from Toronto, Canada
Love this place! Simple, delicious, and comforting.
omg a real steam rice roll from a steam drawer!! absolutely top on my list of must try whenever this whole thing is over and I can travel to NY!
Moving back to the states in mid May 2021, definitely one of the restaurants I’ll be visiting once I do!
Went here before the pandemic. I love rice rolls and always ordered it in dim sum restaurants. They put some interesting ingredients in them that differentiates them from dim sum places. Was always wondering if they survived the lockdown but good to hear they have so far. Please support them, they really do an excellent job with this niche.
Looks amazing & delicious! 😋 Hang in there during this crazy time! 🤗
hoisin and peanut sauce is Hong Kong style cheong fun! Miss it!! looks so yum
Hello...it's 2023, and I finally had the occasion to stay in Flushing prior to an early morning flight. Joe's Steam Rice Rolls are simultaneously life-affirming, and life changing, and not to be missed.
In particular, the Signature dish is rich, filling, and simply wonderful. Cash only, so please act accordingly!
That curry fish ball with the rice roll?! Yes PLEASE!!!! I love the texture of steamed rice rolls. FIrm, silky, carries flavor of sauces pretty well. Such good mouth feel!
i used to eat here all the time before the pandemic! it was my favorite way to treat myself! ive moved away from ny so ive been craving his rice rolls for months now
I just had dinner , watching this still made my mouth water, you need to franchise this business go global
Since covid started I've been stockpiling a list of NYC restaurants/foods found on RUclips that I want to try. This is definitely on the list. My next vacation will definitely be a food tour of NYC.
So heartwarming. I see steam rice rolls differently now. Can’t wait to visit this restaurant once travels are back
Definitely, a must-try spot to eat in NYC! still thinking about those silky noodles from the other side of the country 2 years later
Hope to visit soon! My family often ordered these type of noodles during our weekly dim sum trek way back when
Love these-was so happy when one opened a block away from my home-I eat there once or twice a week. 😋
I moved from NYC to Baltimore three years ago and EXACTLY THIS is the type of genuine, beautiful, expert and culturally niche food experience that I miss. If I ever find my way back there, I will 💯 be eating this food. So glad they survived the pandemic.
I’d be all over this!! All the best Joe!!
Wish we have Joe’s Steam Rice Rolls here…. Favorite!
this place is great! when i first found out about it i was so hyped bc i didn't have to go to a whole dim sum place just this dish. loved this video!
Thanks you for subtitles.
This looks delicious! I can’t wait until I’m able to travel to NYC again so I can try it.
Ask Mr. Google. He might help you to make it at home? 🙃
Same!
Might as well travel to China to eat the best one. I'm telling you, the rural areas have the best ones, far better than Joe's - not saying his isn't good though.
What he said treat the customers as you would family members is exactly right, being a restaurant owner myself that rule is one that makes you look forward to the day
is in things like this that i would love to live in the us. you guys have so many different cuisines to taste in just one country. you are lucky!
Ive eaten at this place many times and have actually seen joe behind the counter! So he is definitely dedicated to this shop instead of just being a person who just owns the store
Man this makes me crave cheurng fun so badly I haven't had it in so long
I'm just reminiscing the ones with shrimp and sweet soy sauce from dim sum/ Yum Cha 😭😭
His Steamed Rice Rolls are surprisingly delicious…that peanut sauce is just the best!
This vid is awesome. More vids like this please! 😁
I hope that he, family and staff are safe & well. I also wanna take my foodie peeps up there & eat all day sometime soon.
respect bro, all the best to your endeavor and family, cheers.
I wish we had this where I live. It looked like specialized equipment was being used. Good luck Joe! 🥰
Had the opportunity to try Joe’s rice rolls in Nov 2019 in the Canal St market. So delicious!
the ultimate comfort food for any little cantonese kid
Oh. My. Goodness. This food looks delicious! I wish I lived closer because I would be there now.
We ate here today. So different from anything else we’d tried, and so very delicious.
Oh you can never go wrong with cheong fun rice ball, mixed with hoisin and peanut sauce. Heaven in your mouth!
I have been there once and i love it . Would go back again .
Keep at it Joe. I live in Montreal but would looooove to have a taste. Good luck and I'm sending good vibes.
Those look so delicious. I bet they taste better than other restaurants because he takes the extra time to make his own rice and then grinds it for the rolls instead of buying rice powder. I can’t get to NYC but I wish he shipped them online. I would buy a lot of these! Yum 🥢🥢🥢
Never tasted it, or even seen it sold. Looks really yummy!
This looks so delicious, nice young man living his dream, best wishes
Never heard of steamed rice rolls until now and now they’re all I can think about!
My mom used to make these from scratch when I was a kid, then life got busy and she threw away that pot/tray thing :( Wish she didn't b/c I'm craving it so much now
Looks so good craving this!! All the best 💫
This sounds cool, I might try it when I go to New York, 2022 should be a good enough year.
Me salivating like crazy watching this, not every dimsum place in Jakarta serving cheong fun and usually don't serve much varieties like his place.
