Nice idea. I'd suggest maybe you want to invert the action of the LED - make it light up when there is a good match (no current flowing / bridge balanced).
That's interesting ..I want to make a cheap soil moisture meter based on it. Will it be simpler if we use a variable capacitor to null out the voltage difference rather than variable resistor. Thanks
Variable resistors are generally way more common and cheap than variable caps, otherwise it should work the same. So I'm not sure what the advantage would be. Also I assume that you're measuring resistance of the soil, not capacitance so a way simpler approach is possible. I made a video on a very simple soil moisture sensor that you can check out if you're interested.

@@5VLogic capacitance are better representation of soil moisture as conductance is affected by salts and also depend on contact with soil particles..
