    Ingredients:
    250 grams arbi (taro root), washed and peeled
    2 tablespoons oil (preferably mustard oil)
    1 teaspoon cumin seeds
    1 teaspoon fennel seeds
    1/2 teaspoon turmeric powder
    1 teaspoon coriander powder
    1/2 teaspoon red chili powder (adjust to taste)
    Salt to taste
    Fresh coriander leaves, chopped (for garnish)
    Lemon wedges (optional, for serving)
    Instructions:
    Preparation:
    Wash the arbi (taro root) thoroughly under running water.
    Peel the arbi and cut it into 1-inch thick round slices. Keep them aside.
    Cooking Arbi:
    Heat 2 tablespoons of oil in a pan over medium heat.
    Add the sliced arbi to the hot oil. Spread them out in a single layer.
    Cook the arbi on medium-low heat, flipping occasionally, until they start to turn golden brown and become crispy. This may take about 8-10 minutes. Ensure that the arbi is cooked through and fork-tender.
    Seasoning:
    Once the arbi is crispy and golden, remove them from the pan and set them aside.
    In the same pan, add a little more oil if needed.
    Add cumin seeds and fennel seeds. Let them splutter and release their aroma.
    Adding Spices:
    Lower the heat and add turmeric powder, coriander powder, and red chili powder. Mix well with the tempering.
    Quickly add the cooked arbi slices back into the pan. Toss gently to coat the arbi evenly with the spices.
    Final Touches:
    Season the arbi with salt according to taste. Stir well.
    Cook for another 3-4 minutes on low heat, allowing the flavors to meld together.
    Turn off the heat and transfer the arbi ki sukhi sabzi to a serving dish.
    Serve:
    Garnish with freshly chopped coriander leaves.
    Serve hot with roti, paratha, or as a side dish with dal and rice.
