@@lanaunik9221 Comments like these make me feel really bad, because some of us are still working, and we even have a lot more workload due to the corona virus and it is incredibly stressful. Not everyone can spend time with their family during this period and can find the time to learn new recipes, skills, etc... I wish I could, but quarantine has made my job extremely stressful and has not been easy on me at all. I am glad that you guys could relax for a bit, just don't forget that not everyone is that fortunate.
I disagree with using the preshredded cheese. I honestly don't detect a difference. Shredding cheese is labor intensive and I don't think it's necessary. I've been the resident mac and cheese maker of my family for over twenty years. I've shredded the cheese three or four times because the recipes stressed it because of the coating. Even with the coating, adding it to a hot mixture of butter, milk and Velveeta, it MELTS. I have to make multiple pans because the family eats and then want leftovers to take home. I also disagree with the idea of adding oil to the pasta water. After pouring the cheese sauce over drained pasta, there isn't an option for it to stick or not. It's literally baked together.

Ooh, I really appreciate the tip about the oil. I usually put oil in my water when boiling fettuccine or spaghetti noodles to keep them from clumping and to keep my water from boiling over. But the sauce I use on those is usually pretty slick itself so I didn't correlate the oil making the noodles too slick. I'm glad you said that before I went ahead and added oil to my macaroni noodles and end up clueless as to why my cheese wouldn't stick! Happy holidays, cheers!
I used your recipe two years ago! Since then my family asked me to make it every time we have a gathering! Coming back to this video tonight because I needed to do a refresher for Thanksgiving tomorrow. I will be working so I prep the entire pan and cook everything and covered it with foil without cooking it. I put it in the fridge and my family will put it in the oven tomorrow to actually cook it
3 years ago tried it as well, I added half a cup of sour cream and it created a bit of a delicious tart taste! and cracked black pepper on top. Like you, since then I've had people just ask me to make it for them. so they could take it for their own potluck and take credit for it, they provided the ingredients and a bottle of my favorite Merlot. When I first saw the Velveeta I thought oh no, how can a sister do that to our soul food...now 😍👌

Perfect! I love this recipe. And I really appreciate you mentioning NOT using pre-shredded cheese since it's always coated with something to keep it from sticking together, making it hard to melt.
It's coated with flour but if your using it for a recipe like this just soak it in milk until your ready to use it makes it creamer & melt better hope that helps..

I have ALWAYS added oil to my water and when I heard u say “never add oil cuz sauce won’t stick” I thought, “well, duh, that makes such sense and I have been doing it all this time, and y? Becuz my mom did. lol. Thanks for the tip, my oil days are done.
thenextbest790 and I have always done that also becuz that’s how i was taught but it does make sense that the oil would make the pasta slippery. It reminds me of a story that I heard about a lady that was making roast for her family for dinner and she seasoned it, cut the 2 ends off and put it in the pan the way she has done it a hundred times. When she was talking to her mom she said to her “mom, I made roast tonight and I wanted to ask u, why do we cut the ends off the roast before we cook it?” And the mom replied “idk y u do it but I did it becuz it didn’t fit into the pan.” It just shows how we can do something becuz it’s how we have seen it done and not becuz it’s a better way, so maybe the oil can be left out. I just remember that it’s supposed to make speghetti not clump together, which makes sense also. There is more then one “right way” to make pasta I guess. 😊

The type of gravy is determined by what type of liquid you put into it. Plus whatever herbs and spices and seasonings you add to it. The roux (flour or starch PLUS fat) consists of the starch plus the fat being heated together; it’s what makes the liquid thicken and turn into a gravy or thickened sauce. It’s a chemical reaction, on the molecular level!! 👍❤️😉

@@joelove1987 Anatto is a plant that grows in the carribean an Mexico they come in little packages on the spice shelves like blackpepper you can add 1 table spoon to 1 half cup of oil heat it on a low heat for 10 minutes and the colour is a rich golden colour. The computer will give you more information. I heard a dr saying that Velveeta is junk food he said it is not even cheese, so I have to check it out on the comp

To keep pasta from sticking together: Save 1/2 cup of the starchy pasta water. Drain pasta. Put cooked pasta in serving dish or pot. Then stir in a pat of butter with the starchy pasta water. You will have pasta that is easy to serve - without clumping.

I tried this yesterday, it was the best I ever made! I made small changes, I mixed carnation milk and whole milk to lighten up that carnation flavor. I didn't boil my pasta all the way because baking it will cook it more. I'm using this method from now on
did it make it dry.. i always thought if you didnty cook it till its a little over cooked it would soak up all the wet and make it to dry.. let me know.

Don’t use cooking spray on anything, they put Propane or Nitrous Oxide as a propellant. I agree, I always make macaroni and cheese with Evaporated Milk, tastes much better

She’s right about the shredded cheese having a coating on it to keep it from sticking together and lasting longer. That’s why for years now, I’ve been buying the block cheese and grating it myself. It taste so much better and melts quicker than shredded. And it doesn’t take that much longer to grate it.
It was so good! I ended adding a 1/4 block of pepper jack cheese on top and I added some paprika and chili powder to the sauce and honestly this recipe is so simple and tastes amazing thanks!

Yes this recipe is 3 years old and I followed your recipe today. The only thing I did differently was using the paprika because I couldn't find the Annitto* thingy. It came out very well... thank you Ps. 1st time making mac and cheese and everyone loved it
It's Annatto and it's usually found in a Caribbean / Mexican supply store or Cultural section of a major chain like Walmart. If you look for Sazon products they carry some of their products made with it to.

@@lenette19 that's exactly what to use and you will find it at Walmart . Any special Latin or Caribbean ship carries it separately but the Sazon has it mixed in there already with other seasonings . It comes as pellets that you melt down to a liquid form or if you lucky you find the liquid form already. Its easier just to by the powder form in the Sazon mix.
@@kerenscott4580 sazón has achiote & or saffron. Achiote is what’s in paprika & it does have a flavor to it but not as strong as the Sazón because sazón has cumin coriander etc. Saffron doesn’t have a taste really but it’s very expensive
@@lenette19 don’t use that it has cumin coriander & a bunch of other heavy seasonings. Look for achiote powder. You can find it in any Latin American stores

Perfect! I love this recipe. And I really appreciate you mentioning NOT using pre-shredded cheese since it's always coated with something to keep it from sticking together, making it hard to melt.
I never realized that, but it makes sense.
It's coated with flour but if your using it for a recipe like this just soak it in milk until your ready to use it makes it creamer & melt better hope that helps..

I use paprika for the flavor, not just the color. Just a bit of smoked paprika makes it sooo good.

I have ALWAYS added oil to my water and when I heard u say “never add oil
cuz sauce won’t stick” I thought, “well, duh, that makes such sense and I have been doing it all this time, and y? Becuz my mom did. lol. Thanks for the tip, my oil days are done.

thenextbest790 and I have always done that also becuz that’s how i was taught but it does make sense that the oil would make the pasta slippery. It reminds me of a story that I heard about a lady that was making roast for her family for dinner and she seasoned it, cut the 2 ends off and put it in the pan the way she has done it a hundred times. When she was talking to her mom she said to her “mom, I made roast tonight and I wanted to ask u, why do we cut the ends off the roast before we cook it?” And the mom replied “idk y u do it but I did it becuz it didn’t fit into the pan.” It just shows how we can do something becuz it’s how we have seen it done and not becuz it’s a better way, so maybe the oil can be left out. I just remember that it’s supposed to make speghetti not clump together, which makes sense also. There is more then one “right way” to make pasta I guess. 😊

@@joelove1987 Anatto is a plant that grows in the carribean an Mexico they come in little packages on the spice shelves like blackpepper you can add 1 table spoon to 1 half cup of oil heat it on a low heat for 10 minutes and the colour is a rich golden colour. The computer will give you more information. I heard a dr saying that Velveeta is junk food he said it is not even cheese, so I have to check it out on the comp

To keep pasta from sticking together: Save 1/2 cup of the starchy pasta water. Drain pasta. Put cooked pasta in serving dish or pot. Then stir in a pat of butter with the starchy pasta water. You will have pasta that is easy to serve - without clumping.

I tried this yesterday, it was the best I ever made! I made small changes, I mixed carnation milk and whole milk to lighten up that carnation flavor. I didn't boil my pasta all the way because baking it will cook it more. I'm using this method from now on

One tip on covering your pan with foil. Be sure to spray the foil with cooking spray before putting that side down on your casserole dish. It keeps the cheese from sticking to the foil when you remove it. I’m making this for an upcoming birthday dinner this weekend. Thanks for sharing!!! ❤️

It's Annatto and it's usually found in a Caribbean / Mexican supply store or Cultural section of a major chain like Walmart. If you look for Sazon products they carry some of their products made with it to.
@@kerenscott4580 I was reading in her description box to not use the Sazon with the ingredient in it. I'm a little confused because that's all I see at my Walmart
@@lenette19 that's exactly what to use and you will find it at Walmart . Any special Latin or Caribbean ship carries it separately but the Sazon has it mixed in there already with other seasonings . It comes as pellets that you melt down to a liquid form or if you lucky you find the liquid form already. Its easier just to by the powder form in the Sazon mix.
@@kerenscott4580 sazón has achiote & or saffron. Achiote is what’s in paprika & it does have a flavor to it but not as strong as the Sazón because sazón has cumin coriander etc. Saffron doesn’t have a taste really but it’s very expensive
@@lenette19 don’t use that it has cumin coriander & a bunch of other heavy seasonings. Look for achiote powder. You can find it in any Latin American stores

I totally agree with over cooking the macaroni for this dish....I like it to be nice and soft, especially for the older folks...and I have never thought to use Velveeta but it makes so much sense since like you said the other cheese gets so oily.
