    • Easy Pork Binagoongan ... Ingredients:
    1 kilo pork belly or pork shoulder, cut into cubes
    2-3 tablespoons shrimp paste (bagoong)
    2 tomatoes, chopped
    1 onion, chopped
    4 cloves garlic, minced
    4 bay leaves
    2-3 pieces chili peppers (siling labuyo), chopped (adjust according to your spice preference)
    2 tablespoons vinegar
    1 teaspoon sugar
    1 1/2 tablespoons cooking oil
    Salt and pepper to taste
    Water (optional, for boiling pork)
    Instructions:
    In a separate pan, heat cooking oil over medium heat. Add Pork belly saute for 2-3 minutes and add black pepper and bay leaves, Cover and simmer for about 10 minutes
    Remove the bay leaves and the pork from the pan and set aside.
    Remove half of the pork fat from the pan.
    Add the minced garlic and sauté until fragrant.
    Add the chopped onions and cook until translucent.
    Put in the chopped tomatoes and cook until they soften.
    Add the shrimp paste (bagoong) to the pan and stir well to combine with the other ingredients. Let it cook for a few minutes.
    Add the cooked pork to the pan and mix it with the other ingredients. Allow it to cook for a few minutes, allowing the flavors to meld together.
    Add more black pepper and the vinegar. Let the vinegar evaporates and do not mix.
    If desired, add chopped chili peppers for a spicy kick.
    Taste and adjust the seasoning with salt and pepper if needed. Be careful with the salt as the shrimp paste can be salty already.
    Once everything is well combined and heated through, you can serve your pork binagoongan hot with steamed rice.
    This dish is typically served with rice and pairs well with fresh slices of tomatoes or cucumber on the side to balance out the flavors. Enjoy your pork binagoongan!
