Hey Reed, Geoducks are not intertidal, they are found in 20ft to well over 100ft of water on firm sandy bottoms with decent tidal flow. You harvest them by diving and you need a high-pressure water hose(called a 'stinger') to blast them out of the sand. Commercial harvesters have fishing vessels equipped with air compressors and hundreds of feet of air and water hoses. It's hard work for the divers but the pay can be pretty good. In BC, Canada it requires a special licence to harvest them commercially.
When I was very young, my parents went to dillin Beach and dug up gouieduc in Tomales Bay. My father had a meat grinder to mince the neck for soup! I'll always remember that flavor!

Also had fresh dungeness crab, barbecue salmon with alder chips imparting a smoky flavor, smoked salmon right off the docks.....had a big garden, raised beef and pork. So yeah, razor clams are awesome, but they are nowhere near as plentiful as they were. When digging season started the vehicles parked on the beach formed a line so long it was unbelievable. If razor clams sucked no one would have showed up to dig for them. Got carried away on a wave of nostalgia there, good memories for me.

I can eat whatever if it is cooked. I know it's just a mental thing, but I can't do raw meat. I'd definitely try some clam chowder made with this though. Sounds great actually.
As someone who has some experience in preparing geoducks, I should suggest cleaning the inside of the siphon with some very coarse salt and wash with lots of water. Otherwise the sashimi may contain some smelly sand.
Whenever I see these geoducks I always think of the Dirty Jobs episode, which I think kinda introduced this bizarre looking shellfish to a more mainstream audience.

if you like clams, this is the king of clams..and the price to match. I prefer it raw as cooking it loses a lot of flavor and sweetness. The part with the innards should be cooked though, I've never tried that bit raw, I assume its like a raw oyster

Growing up in NorCal I clam dug many times and large Horse Necks and Geoducks were always the prize. Back in the mid 80's oine time I dove the channel into Morro Bay. I had never seen such large clam siphons before.

You don’t need to boil it in a pot at all. Just run it under hot tap water. All the skin still peels off.
Boiling water from the kettle does the trick. Most of us don’t have a hot tap of consumable water.
