Very impressive work! Your use of the tongs and rag as a sword and shield are stellar! I also feel like there's different Temps to the level of your fire oven which makes for good reverse sears on that salmon as well as making sure temp safe first then finishing with the fire(searing I think)
You’re exactly right. The top of the oven is much hotter than the bottom, and the temperature of the entire oven varies all the time so finding the sweet spots can be pretty difficult. I appreciate the feedback!
