🌼 Tom Yum Kung
Ingredients
3 cups water
3 cups chicken stock
3 shallots, small diced
2 oz galangal, sliced
3 cloves garlic, chopped
3 lemongrass, cut into 3” long and smashed
3 to 4 kaffir lime leaves amzn.to/38sn2tt
4 tbsp fish sauce
4 tbsp Thai chili paste (adjust to your taste) amzn.to/3erCAl6
8 to 10 oz mushrooms (I used shimeji & oyster mushrooms but you can use any mushrooms you have)
1 lb whole prawn or U13-15 shrimp, head removed & deveined (you can peel if you prefer)
3 to 6 Thai chilies, smashed
2 tomatoes, diced, optional
4 to 5 limes
1/2 cup evaporated milk, optional
Handful cilantro, chopped

My tips for tom yum:
- I find that frying up the shrimp shell and head first + squeezing the head so that the guts have time to caramelize, and then adding water/stock will give it a much deeper shrimp-y umami flavour and a beautiful orange colour! (You can remove the shrimp shells once you've extracted the flavour, or leave it in)
- Frying the aromatics at this stage (after caramelizing shrimp bits) also helps develop flavour by blooming it in oil.
- Sugar (palm sugar if you have it) is an essential ingredient that will round out the strong sourness + spiciness of the soup.
- Adding fresh lime during cooking will make it more bitter and less fresh/punchy - so definitely add lime (and half the fish sauce) after turning off the heat! :D

I will cry if you don't add the chilies 😂 I love tom yum soup with evaporated milk too, it really really tasty 💗 (but my grandmom like to use coconut milk instead, I'm not a big fan tho, but it's like an old Thai granny style)

The paste is called น้ำพริกเผา (nam phrik phao), if ur making creamy version then add this along with the pounded red chilli and then add in evaporated milk (not coconut milk) its traditionally made using evaporated milk. If ur making clear version then dont add in nam phrik phao, just add the lemongrass, makrood like leaves and galangal to water and bring it to boil then add in small thai shallot (leave them whole) then add in pounded thai red chilli and tamarind paste then add in ur protein ( it can be made using river prawn, normal prawn, cubed pork hock and feet, soft bone pork ( its a type of cut which comes from near the shoulder and hip area, it might be really hard to find in foreign countries except for thailand ).

I know it would be an extra step but, since a bit of it is inedible, could you maybe strain the stock before adding the mushrooms and everything else to it? This looks delicious and I want to try it but I don't know if I want to go fishing around for the mushrooms and shrimp haha
Yes, that is what some people like to do. After the herbs have infused their flavour you can strain/scoop them out and then add the rest of your ingredients

Is it possible to exchange the lime leaves for lime zest?
Yes, that will do in a pinch. But I do hope you can find kaffir lime leaves, they freeze well. If you happen to live in a temperate climate, the kaffir lime tree grows prolifically, and as it's mainly harvested for the leaves and not the gnarly fruit, it's not so challenging to grow.
Can we chop up the lemongrass?
Not unless you want hard chewy bits of lemongrass in every bite
this is one of our favourite Thai soup, just the vegan version. i cannot wait for you to re create this vegan :)

Can you make your Version of Vietnamese Pho by add Can Coconut Milk & Cream Cheese with Squid & Extra Dark green leaves plants Vegetables & your favorite Vegetables too with Baked Red-ish Tomatoes with Garlic, your favorite Korean flavors at 350 f for 30 half a hour or so for to add to Soup? Add red onions too.
