  • The pigeon pea is a perennial legume from the family Fabaceae native to the Old World. The pigeon pea is widely cultivated in tropical and semitropical regions around the world, being commonly consumed in South Asia, Southeast Asia, Africa, Latin America and the Caribbean.
Mukimo, mokimo or irio is a Kenyan meal prepared by mashing potatoes and green vegetables. It may also include maize and beans. Mukimo is mostly served as an accompaniment for meat-based stew and nyama choma. Though originally from the central part of Kenya, Mukimo is now consumed amongst various communities in Kenya.

Consider adding about 2 or 3 green bananas (matoke) and boil with potatoes. It helps to keep the mukimo firm and not soggy.
