  • Do you like balsamic vinegar? But not those cheap bottles in the supermarket, I'm talking about the good stuff! Aceto balsamico tradizionale di Modena DOP. This is made in artisanal fashion in a very specific region of Italy, and it is the gold standard. How do they make it, precisely? And what is the history of this process?     I have been a chef for 40 years. The italian chefs i worked with have by far the most love for pure products.the amount of blasphemy around italian food is astounding

    I first learned about real balsamic vinegar from Alton Brown’s food science show Good Eats. I was probably 11 years old or so. I asked for a bottle for my birthday. 😂 I keep a bottle along with other pricey items for special occasions, or for days when I just want to treat myself. Balsamic on ice cream? One of my *favorite* treats, ever. I usually do strawberry ice cream and a sprinkle of flake salt or smoke flake salt. 😋

    Quite lucky to have a small local shop where I pick up olive oil and balsamic. An amazing experience, as each type of olive oil and balsamic are setup with tasting cups. I've become more a fan of the white balsamic, especially for deserts and fruit, as it tends to be sweeter.
    Desert pizzas are amazing when you use a fruit infused olive oil for the crust, with accompanying fruits on top, drizzled with good quality chocolate and a white balsamic.

    In my 37 years (most of those living with my immigrant grand parents) I've never thought to put balsamico on my cheese, fruit or ice cream. Now I'm going to have to try it.

    Hey Dave, have you ever got a chance to taste one of those Tradizionale vinegars yourself? Also, in Canada, they charge around $70 for one bottle (12 years), which is much more than what was said in the video. But anyways, very informative video as balsamic vinegar is one of the most misinformed products in any market.

    5:05 "most cotto", to be clear, "must" is any liquid intended to become a wine, and its beer equivalent is called "wort." Good video, carry on.

    I have tried balsamic and I didn't like it. It's nice to know that it wasn't just because I am a heathen .... I mean, I am but the vinegar I tried was the supermarket kind. I might try the 12-year-old version of this and see what I think.

    Hi, this is very good explenation but remember that the +-50 acetaias you mentioned are more like commercial stuff. In Modena we have about 4500 families who have an acetaia at home. The real balsamic vinegar is made by thoes families, visit our channel to find out more and if you pop in Modena, please contact us to visit one of those acetaia.

    I have a bottle of "Aceto Balsamico di Modena" of the poducer (Guido) Ponti. It is also "Indicatione Geografica Protetta"
    Also mentionned is this "prodotto a vigniolla Modena Around a redshieldwith light "gold" cross. Thecontentis 500 ml
    What isyour opinion about that "Balsamico"?

    Normally I'm an atheist
    this product however makes me wonder if their might, after all, be a benevolent God
    and I only have a cheapish 'aceto balsamico di modena I. G. P.' by "Ponti" from my local supermarket in the Netherlands for about 7 euros or so (250ml)
