- Have I told you I'm a bit of a summer produce addict? I can never get enough of the outrageous flavors that arrive at the market this time of year! One of my favorite ways to hold on to the season's freshest fruit is by making jam -- and it's easier than it sounds! Today, I chose raspberries, but my method will work with most fruits. Savor the remaining days of summer and make some jam today!
Sarah's Tip of the Day:
Once your fruit reaches a rolling boil, it will still require about 10 more minutes of cooking time (if you remove it from the heat too quickly, it may be too watery). For more tips on canning visit www.freshpreserving.com.

YIELD: Makes about 4 cups
INGREDIENTS:
3 pounds fresh berries 4 1/12 cups sugar 4 1/2 teaspoons lemon juice (from 1/2 of a lemon) Pinch of coarse salt
DIRECTIONS
STEP 1
Place a few small plates in the freezer. Stir berries, sugar, lemon juice, and salt in a large, heavy stockpot. Bring to a boil, stirring to dissolve sugar and mashing lightly with a potato masher. Skim foam from surface. Cook, stirring more frequently as jam thickens, until it has the consistency of very loose jelly, 8 to 9 minutes. Remove from heat.
STEP 2
Remove a plate from freezer; drop a spoonful of jam on it. Return to freezer for 1 to 2 minutes; nudge edge of jam with a finger. It should hold its shape. If jam is too thin and spreads, return it to a boil, testing every minute, until done.
STEP 3
Strain about half of the jam; discard seeds. Return strained jam to pot; stir in remaining teaspoon zest. Return to a boil. Remove from heat. Spoon hot jam into hot sterilized jars; cover immediately with sterilized lids.

Making Raspberry Jam with a white shirt on !!?! You're so brave !
If that's "such a small batch" of Jam, I can't imagine what a big batch would look like!!!
For all that sugar this gal is in great shape! Well done sister. Great video instructions too. Thx.
....whenever I go to a strawberry jam video, all i see is about jimin's lost jams lmao 😂
OMG!!
Sarah, I'v seen the recipe two months ago, I made it and it was the best jam I have ever made.
Thank you sarah, for all the great recipes!
11/19/23: Thank you for a fantastic demo on how to make this jam. I'm getting ready to make it in a few and am excited to see how it turns out. 😋
Thanks so much! I'm glad you found our youtube channel. i let you know about the interning! xs
My first jam was rhubarb. For that and others, everyone is always adding water. I found I can mix the rhubarb (berries, apples, pears...) with the sugar and just let it sit. Do it the night before and let it sit in the fridge or just let it sit on the counter for a couple of hours. The sugar juices the fruit and you have more than enough liquid.
Thank you for all the channels that made jam! Now Jimin can enjoy his jams. ❤️
It’s okay from the store but it’s amazingggg when it’s homemade
Omg have ARMYs invaded EVERY jam video out there!? I’ve seen like 50 and they ALL have BTS jokes about Jimin and his jams 😂
Itz M no jam video is safe 😂

"They got NO jams"
I make this recipe every year so simple and perfect!
Jimin you got no jams😂
As a child Saturdays were always my favorite days because I got to watch Everydayfoods on KPBS! I just moved to the UES, if you ever need an intern I would be more than happy to assist you!
Definitely will try this. The color of the marmalade is gorgeous!!
I thought marmalade was only with oranges?!
Thanks, best explained jam video I have seen so far.
That is such a beautiful red color :)
wow, cool. All the information I needed plus I get to look at Sarah Carey for 8 minutes.
Is it just me that adds a splash of red wine to my raspberry jam?
Are you making the jam for jimin? That's really nice of you

@@sitted I like my life so you do it it must be terrible being an army
Shush
I made Fig jam and Strawberry jam and it's absolutely delicious
Put in a knob of butter, and you wont get the foam.
In my Ball Jam and Jelly maker, they suggest to add a teaspoon of butter to cut down on the foam. I use the frozen spoon to test doneness that I learned on another You Tube video. I started jam making and water bath canning last year at the age of 71. My mother never canned, but her mother did. After my grandparents passed away there were still canned goods in the basement from their garden.
I bought a Ball Freshtech Jam and Jelly Maker a few years back have been making my own jam in 20 minutes top...I will use your recipes, but the method is my own.
Is the jam for Jimin?
Welcome Armys
1 c raspberries, 1 to 1 1/2 tbsp sugar, pinch of salt, juice of 1/2 lemon. Makes 1 pint.
Looks delicious raspberry jam is one of my favourite, my sister got a raspberry garden and that's where I pick mine. Bonita
Give some jam to Jimin!!!
This ain't strawberry jam!
Great recipe and method!
I wanna be a jammer canner one day! Love this!
did you do it? Are you a jammer canner
Came here to make Jimin some jams
lol
Awesome video …. Thank you Sarah!
Thank you I was wondering how to take the seeds out 💗
Also an electric raspberry seed tweezer from sharper image is effective though, yeah a bit pricey and specific to be sure.
I'm glad you enjoyed it. Making jam is one of my passions. You should see my freezer right now! Totally full of jam.xs
Hey Sarah! I love watching all your videos. It makes me so happy to cook! Is there a way I can make jams sugar free? My hubby is a type 2 diabetic and he REALLY misses a good jam. Any help would be awesome! Thank you!!
OMG... Sarah... I just love your videos. My Husband and I are hooked!!!
Thank you for the video I made Jam for the first time (raspberry) and I did not mess it up. 😅
You're a great teacher. 👍
With love from the crazy Dutchman.
thank you so much. my sisters and I have a place with loads of raspberry bushes and been picking them like crazy. ive been looking for a jam recipe to try
Yes. I make strawberry jam in a similar method. Just DO NOT double recipe, strawberries are quite low in their own natural pectin, so too big a recipe could cause problems (not set). I have never pureed the fruit for strawberry or raspberry, but i have for peach and it works fine, so I'm sure you can do it here too. xs
What do I do? I don't have any jams
Ask Rapmon. I heard he stole Jimin's jams
Ya, but he stole cool jams. I don't even have hot jams. I have a room temperature jar.
I never would have expected bts in the comments :P
We ARMYS are everywhere :D
Very good video ! Thanks for helping me along the way !
this is the best recipe
I tried it and it lasted for 2 years.
yes. I do! i love all fruit! xs
Fabulous detail , thankyou
Amazing
well, i should say only a few weeks (as recommended by the USDA), but i often keep jam in my fridge for up to 3 months without issues. Just check to make sure there is no mold and you should be ok.

No complaints on the seeds? My very limited experience so far is with my own Royalty Purple raspberries, and after I go through the routine of straining out the seeds the product is sort of a jam/jelly. When I made blackberry jam the seeds weren't too troublesome but these raspberry seeds are too much for me. I don't know if different raspberry varieties vary much as far as the size and hardness of the seeds.
This was a great video, and my jam came out awesome.
Awesome
I am...absolutely PROUD Of this fandom 😂😂😭
I really want to apologize on the behalf of this fandom
But I cant
Lol, I was like, wat u mean?
And then i scrolled down into the comments
Good stuff
If I don't want to add Sugar, how long should I expect the jam to last in refrigerator?
If you want to have your jam healthier, you can use coconut sugar :)
White shirt...daring!
Excellent video
Link for the full recipe keeps redirecting to different things each time you click.... ads, random articles...... something is not working.
I am so proud of this fandom lmao
If I were to swap raspberries for strawberries, would I need to use pectin? Also, I'm not a big fan of pieces in my jam, so would it be alright to puree the berries first? Thank you Sarah!
that helped!
yes. same amounts.
Yeah, me too.
You can freeze it (for up to a year), refrigerate (for a month) or water bath can. sorry if it was confusing, i was just trying to give options!xs
If my lids seal without a water bath can they still be put in the freezer for the same length of time?
Hey Sarah or any of the readers for the dish Chicken Parmesan what side dish can go with it? If any one has a suggestion please comment. Thanks :)
myfood123 I used to make fettuccine Alfredo.
Ooohh! Jammin'! I like jammin' witchu!

Looks yummmmmy :)
Made this jam and filled jelly jars but did not water bath. Put cold jars in freezer. Anyone know how long the jam will last in the refrigerator once opened?
thanks! xs
I found his jams
i found the jams
for a next recipe please make suga-jam kookies that go well with tae? we would all really appreciate it
Could I substitute the pectin for gelatin. I know that the two are completely different. I just have a ton of unflavored gelatin that was given to me and nothing really to use it for or any recipes to use it in. If so would I use more or less gelatin than the pectin.
My question I have is , if you were going to process the jam for shelf life ,how many minutes:-)
i like your video so much...but i do live here in the philippines and we rarely have opportunities to buy berries..but we do have a lot of tropical fruits. like mangoes, pineapple, jackfruit...will this do the same way for our available fruits?
Rona Jean R. Baranda my grandma makes gauva jam. I forgot the Tagalog of guava
Do you have to add the sugar?
I don't think that would work....you could try i guess. but i have never made Jam with sugar substitute. xs
Can I use lime instead ?
Why would you put jam in the freezer? Boiling fruit up with sugar to make jam is the one sure way to preserve the fruit. We didn’t have freezers years ago that’s why jam making was popular! Fruit can be frozen nowadays and brought out as and when required.
What is the difference between using and not using pectin?
Canning rasberry jam in a white shirt! What a woman
how long do you soak the lids in hot water? 10 min???
Do I have to put a lot of sugars in jams if I’m diabetic
Can you use mint instead of lemon juice
Professional
Can we use powdered sugar or granulated sugar?
How long does it last if I don’t boil it
Do you actually seperate the seeds from the raspberries and then put then in the jars or you don't need to ? thank you
taherie wright completely optional
It is alot of sugar, but still about half the sugar you would need to use if you were using traditional pectin!
Ya, I just purchased the pectin in case I wanted to use it, but you’re right - using the pectin takes a LOT more sugar.
Awesome tutorial! Yours is the first vid I chose, and I have no need to compare to others.
Thanks for not adding a bunch of yakkidy-yak, or putting us through a long boring intro!
But SO much sugar! Is that really necessary?
when you say that, what do you mean?
Could you make this without sugar?
How long will a jar keep in the fridge?
I would have strained the seeds before cooking it down.
Also make sure that you're wearing a bright white shirt so that the inevitable splatters have maximum effect. ;)
ok... I got so confused towards the end with the freezer or no freezer... I have to watch again. may be
A bit on the sweet side
Hi, i made a ten kg of strawberry jam. It's color was beautiful red after cooking but almost one month later its color changed and the taste slightly changed. I kept the jars out of the fridge, was it the reason? What should i do.?
Canned jam/jelly is always a beautiful bright color of red but fades to a darker color quickly. Freezer jam retains this bright color and actually a more fresher taste because it’s not cooked. Even if you it were to store your canned jam in the fridge the color will eventually change
