  • Have I told you I'm a bit of a summer produce addict? I can never get enough of the outrageous flavors that arrive at the market this time of year! One of my favorite ways to hold on to the season's freshest fruit is by making jam -- and it's easier than it sounds! Today, I chose raspberries, but my method will work with most fruits. Savor the remaining days of summer and make some jam today!
    Sarah's Tip of the Day:
    Once your fruit reaches a rolling boil, it will still require about 10 more minutes of cooking time (if you remove it from the heat too quickly, it may be too watery). For more tips on canning visit www.freshpreserving.com.

    YIELD: Makes about 4 cups
    INGREDIENTS:
    3 pounds fresh berries 4 1/12 cups sugar 4 1/2 teaspoons lemon juice (from 1/2 of a lemon) Pinch of coarse salt
    DIRECTIONS
    STEP 1
    Place a few small plates in the freezer. Stir berries, sugar, lemon juice, and salt in a large, heavy stockpot. Bring to a boil, stirring to dissolve sugar and mashing lightly with a potato masher. Skim foam from surface. Cook, stirring more frequently as jam thickens, until it has the consistency of very loose jelly, 8 to 9 minutes. Remove from heat.
    STEP 2
    Remove a plate from freezer; drop a spoonful of jam on it. Return to freezer for 1 to 2 minutes; nudge edge of jam with a finger. It should hold its shape. If jam is too thin and spreads, return it to a boil, testing every minute, until done.
    STEP 3
    Strain about half of the jam; discard seeds. Return strained jam to pot; stir in remaining teaspoon zest. Return to a boil. Remove from heat. Spoon hot jam into hot sterilized jars; cover immediately with sterilized lids.

    My first jam was rhubarb. For that and others, everyone is always adding water. I found I can mix the rhubarb (berries, apples, pears...) with the sugar and just let it sit. Do it the night before and let it sit in the fridge or just let it sit on the counter for a couple of hours. The sugar juices the fruit and you have more than enough liquid.

    As a child Saturdays were always my favorite days because I got to watch Everydayfoods on KPBS! I just moved to the UES, if you ever need an intern I would be more than happy to assist you!

    Put in a knob of butter, and you wont get the foam.

    In my Ball Jam and Jelly maker, they suggest to add a teaspoon of butter to cut down on the foam. I use the frozen spoon to test doneness that I learned on another You Tube video. I started jam making and water bath canning last year at the age of 71. My mother never canned, but her mother did. After my grandparents passed away there were still canned goods in the basement from their garden.

    1 c raspberries, 1 to 1 1/2 tbsp sugar, pinch of salt, juice of 1/2 lemon. Makes 1 pint.

      Also an electric raspberry seed tweezer from sharper image is effective though, yeah a bit pricey and specific to be sure.

    Yes. I make strawberry jam in a similar method. Just DO NOT double recipe, strawberries are quite low in their own natural pectin, so too big a recipe could cause problems (not set). I have never pureed the fruit for strawberry or raspberry, but i have for peach and it works fine, so I'm sure you can do it here too. xs

    well, i should say only a few weeks (as recommended by the USDA), but i often keep jam in my fridge for up to 3 months without issues. Just check to make sure there is no mold and you should be ok.

    No complaints on the seeds? My very limited experience so far is with my own Royalty Purple raspberries, and after I go through the routine of straining out the seeds the product is sort of a jam/jelly. When I made blackberry jam the seeds weren't too troublesome but these raspberry seeds are too much for me. I don't know if different raspberry varieties vary much as far as the size and hardness of the seeds.

      If you want to have your jam healthier, you can use coconut sugar :)

    If I were to swap raspberries for strawberries, would I need to use pectin? Also, I'm not a big fan of pieces in my jam, so would it be alright to puree the berries first? Thank you Sarah!

    You can freeze it (for up to a year), refrigerate (for a month) or water bath can. sorry if it was confusing, i was just trying to give options!xs

    Made this jam and filled jelly jars but did not water bath. Put cold jars in freezer. Anyone know how long the jam will last in the refrigerator once opened?

    Could I substitute the pectin for gelatin. I know that the two are completely different. I just have a ton of unflavored gelatin that was given to me and nothing really to use it for or any recipes to use it in. If so would I use more or less gelatin than the pectin.

    i like your video so much...but i do live here in the philippines and we rarely have opportunities to buy berries..but we do have a lot of tropical fruits. like mangoes, pineapple, jackfruit...will this do the same way for our available fruits?

    Why would you put jam in the freezer? Boiling fruit up with sugar to make jam is the one sure way to preserve the fruit. We didn’t have freezers years ago that’s why jam making was popular! Fruit can be frozen nowadays and brought out as and when required.

    It is alot of sugar, but still about half the sugar you would need to use if you were using traditional pectin!

      Ya, I just purchased the pectin in case I wanted to use it, but you’re right - using the pectin takes a LOT more sugar.

    Hi, i made a ten kg of strawberry jam. It's color was beautiful red after cooking but almost one month later its color changed and the taste slightly changed. I kept the jars out of the fridge, was it the reason? What should i do.?

      Canned jam/jelly is always a beautiful bright color of red but fades to a darker color quickly. Freezer jam retains this bright color and actually a more fresher taste because it’s not cooked. Even if you it were to store your canned jam in the fridge the color will eventually change
