For anyone using a gopro 10, I have found a way to actually do this unlike what the video says which does not work.
    1. Turn on the Gopro
    2. Swipe down to get to the menu shown on this video
    3. DO NOT click the button shown in this video, instead click the one on the bottom right called max lens mode. You do not need to have the actual max lens, as I don't.
    4. Swipe up to get back to the main screen. You should notice that the lens option on this screen on the left can only do superview or wide while in this max lens mode. I use superview personally.
5 Turn the gopro to the vertical position. Click the circle on the right that shows a square with a line through it. This is horizon lock mode. Make sure it is blue/enabled.
    6. Press record while still in vertical position, and once recording, you can now turn it back horizontal and snap it into whatever mount you're using.
    7. Just as a bonus tip I will disable and re enable the horizon lock each time I want to do this way of filming. I'll turn off horizon lock and next time I use it I'll repeat steps 5 and 6 if it's already in max lens mode. But I think you can just leave horizon lock on and it will work from either vertical or horizontal mode depending on which mode you're in after pressing record. Haven't tested it so I thought I'd just add this extra tip to say how I do it every time.
    You're welcome!

Recording in vertical format with the camera positioned horizontally is possible, for this it is necessary to activate the Max Lens mode (even if we do not have a max lens mode), block the screen orientation in the vertical position, block the horizon leveling that only appears in the previously activated max lens mode, and we could now rotate the camera at different tilt angles without losing the orientation of the image in vertical format.
