Lato is pronounced with an open front A like in in hat or alpha. It is a polish word for summer and the font itself was made by a polish designer, Łukasz Dziedzic. It's one of my favorites, but I'm going with Geist for my next project :)
There are a lot of good fonts, but you always have to remember that when you're working on a bigger project or an app you have to account for different languages, and then many fonts can't be used. That's why most of these that he mentioned are so popular. I think Latin Extended fonts are the safest choice.
why isn't it just universally called UX/UI? User Experience comes first because even if the User Interface is a human and not a graphic user interface their still getting a user interface??
I'm sorry, I'll have to disagree. The font itself is great, but it's greatly associated with 2014 material design, so seeing it used outside Google, especially alongside material design v2, makes the overall design feel amateurish.

It’s “LATO”, not “LEITO”. It’s a font from polish designer and in polish language “lato” means “summer” :)

Roboto is too old looking now. Inter is the new Roboto.

I don't recommend Lato. It is not Latin extended, so for some European languages the accented characters do not appear correctly.
