Does it depend on the weight of the goat? Like they say in India that goats less than 10KG live weight have tender meat for eating, but more often than not, I found it to be a myth. Or does it depend on the breed of the goat. For example googling the most tender goat meat brought me to Kalahari Red Goats breed and to your video. Thank you very much.
There are a few factors that determine that. 1. Age of goats. The younger the goats the more tender their meat will be. 2. Husbandry system. Goats raised intensively without a lot long distance movements will tend to have more tender muscles than those raised extensively that move a lot and have their muscles harder. 3. Nutrition. What a goat eats is what it is mad of. And Of course no matter how hard the goat meat may be - it can be made tender by adequate time of cooking.

It is the youngest goat he says he can butcher and the meat is still very tough. I have doubled and tripled the amount of time the meat cooks, from 20 mins to 40 mins and even 60 mins. There is very little difference in ternderness of the meat cooked at 20 mins, 40 mins or 60 mins. I am astonished and confused as to why the meat from one butcher, who is butchering the same sized and aged goat cooks perfectly tender in 20 mins while the meat from another butcher, when cooked at 20 mins, 40 mins or 60 mins, is still tough as a brick. Yesterday evening at the dinner, I broke my tooth trying to chew this tough meat.

Thank You for asking. The major goal of any crossbreeding program is to bring out the best genetic qualities from the two breeds in the crossbreed. In this case there are two qualities we want to bring out. 1. Size. The West African Dwarf weighs a maximum of 25kg while a Kalahari red weighs up to 160kg. Their cross breed weighs up to 50-60kg. Consequently- the crossbreed will attract a better market price much more than the local breed but a lot less expensive than the imported breed. 1. Genetic vigor: Thete are traits in each breed that makes them unique. The West African Dwarf is trypanotolerant (resistant to tse-tse fly bite and sleeping sickness). The imported breeds are not. By crossing them - the crossbreeds inherit this resistance. There are other reasons why crossbreeding in some some animals are good but these two are the most important.
