Lori, you did an amazing job of cutting up that moose. I'd suggest next time you grind burger. Use the plate you put on your grinder last . Then the finer screen on. To clean your grinder after you're done with it, run a potato thru it will get all your meat out. Then grind afew more potatoes for fryed hash browns for a meal. Great job both of you.

Nice job cutting that up! Only suggestion I have is to lay out your first grind burger in thin layers and freeze it. Then add your beef or pork fat and grind it mostly frozen, that will help keep the texture and you won't have paste.

Moose meat is such a luxury! I was fortunate as a kid growing up to have my fill visiting my grandparents in eastern Canada/New Brunswick. Those days are long gone now but I remember it well. Just an interesting tid bit I remember. New Brunswick also has a lot of road kill moose. If you are in jail or in the hospital you are likely to be fed moose.

The heart and the liver are the best part. Dipped in egg and then in flour, fried real fast it is very tender. Don't cook it too long or it will be tuff. It's not gamey tasting. Game meat is so beautiful very little fat. We made our venison into Italian sausage mixed with a small amount of pork fat. It was so delicious. 💖
Get the plastic auger attachment that goes inside the plastic horn it will speed up the stuffing even more and also get a foot pedal so the person stuffing the bag can start/stop the grinder. Great Work!

Well. This is my first video of yours. I will be subscribing. I think you did a wonderful job of cutting up all of that. I have never processed an animal even a small one. So for somebody to process a huge animal like that. I definitely give you props for that.😊
Hi! New subscriber here! Not sure how your channel came up but I love this type of content. I’m so glad y’all were able to make all the logistics of getting that moose back to your house for processing. What a tremendous blessing for thanksgiving!! But that has to be exhausting to process that yourself. Heck, I tried spatchcocking my turkey for thanksgiving and had to get my boyfriend to intervene. I’m recovering myself from two broken wrists, broken elbow, small pelvic fracture and the tip of my pinky (at the cuticle of my fingernail) amputated and sewn back on. I had surgery on 9/13 and they removed the pinky that wasn’t healing and plates in both wrists. Two plates, 14 screws and I’m actually healing nicely. Just got my casts off and have removable splints on and started PT. The wrists have by FAR been worse than the other injuries. The pinky is a nasty injury and I’m just ready to be back to normal, which is still going to take a minute. But I am in complete awe of the amount of meat you got off a young bull moose. 😳 Good for you!! Grateful your friend was able to help get it skinned and cut in a manageable size!! Take care of that wrist and just know healing takes time. Merry Christmas!!🎄🎁

I've also have the LEM grinder. I've found that I have much more control using my LEM sausage stuffer where I can control the speed and the amount with the crank handle much better compared to the grinder. If you invest in the foot control, the grinder would perhaps work just fine. I don't have that accessory with my grinder.
A quick tip for the future regarding grinding meat. You want to make sure it's chilled really well eg 34f-26f before each pass through the grinder because as it goes through the auger, blades and disc it warms up, which can in turn cause the meat to bind up and cause it to create blockages like you saw when trying to do the 2nd grind into the bags. But that moose meat looks awesome 😊.

So it is a case of buying it from the meat works where it costs a fortune. So there I was buying a once every few months a slab of meat to cut up,and other meats for the freezer.Watching you cuting and using the baging mch is exactly what I was doing.BIG JOB ...but well worth it Never eaten your meats love to try it but probably never will. Have eaten Turkey, beef, lamb,even tried snake once( was not impressed) kangeroo ( yum) crocodile tail ( never touch it again) and ostrich ( it tasts like gamy turkey I like it) and best of all is goat it's better than anything else. We'll good luck blessings.
Processing moose is always a good time. Another idea for stuffing bags. When you’re in town next, take a meat bag with you to the thrift store or goodwill. Find a couple plastic cups that the bag will fit over the bottom. Cut the bottom off the cup, lightly grease with rendered fat or oil and it’s the best funnel to fill the bags with the bulk grind. Nice family you have there.
My big grinder too, if you feed it to fast the air can't get back out so it don't push once you have that figured it works great for stuffing sausage too :)
Big thumbs up. Wow you did a great job. Not too many women could do that. Or they wouldn't do it. You know sometimes if you can't get beef fat you can use pork fat and mix it with venison and it turns out real well also.
When I do a white-tailed deer loin I no longer cut it into boneless chops. I cut a loin roast (a chunk of meat big enough for two people) and freeze it. This way if I want a roast for dinner there it is, if I want a boneless loin steak (chop) I just have to make a cut and I am ready. Good job though. Freezing the meat a bit before grinding will make it grind easier. Looks like the three of you did well.
Just a suggestion, when you add the fat, that's the perfect time to add a good sausage blend. And with the electric grinder, don't forget to add some ice to keep the blend cool
We have ground a lot of venison and have not run into that problem. Leaving the silver skin on can clog up the grinder. Also deer fat is pretty nasty so we take it off before grinding and add pork shoulders fat and all.

Exactly what I was going to suggest. Don’t grind your fat leave it frozen then grind, will get a much better product.
They had fat from cow frozen but they thawed it up to use

Same here in Montana. Road Kill list. When we get a Moose or an Elk it's a big job, and we share with neighbors the work and the meat.

With the nice grinder you have, get hog ring pliers to seal the hamburger tubes. Also a handy to for the garden and all over. Good health...

Great show. Huge project to take on but it will be worth it. Beef burger is six bucks a pound here in Michigan, can't imagine what it is there.
80% is around $7 a pound.

It also helps to put the metal tube in the freezer. Partially freezing the meat before processing also helps with slicing it up.

We ground venison meat while it was partial frozen. It came out gummy. We were really disappointed.
