*Amlaki Murabba Recipe*
*Ingredients:*
Amla (Indian gooseberries): 500 grams
Sugar: 500 grams
Water: 2 cups
Cardamom powder: 1/2 teaspoon
Saffron strands (optional): A few
Clove: 4-5
Lemon juice: 1 teaspoon

*Instructions:*
1. *Prepare the Amlas:*
Wash the amlas thoroughly and prick them with a fork or skewer. This helps the sugar syrup seep in.
Boil water in a pot and blanch the amlas for 2-3 minutes. Drain and keep aside.
2. *Prepare the Sugar Syrup:*
In a deep pan, add 2 cups of water and 500 grams of sugar. Heat until the sugar dissolves completely and the syrup thickens slightly.
3. *Cook the Amlas:*
Add the blanched amlas to the sugar syrup and cook on low-medium heat. Stir occasionally to ensure the syrup coats the amlas evenly.
Add the cloves and saffron strands (if using) to enhance flavor and color.
4. *Flavoring:*
Once the amlas become soft and translucent, add cardamom powder and lemon juice. Stir well to balance the sweetness.
5. *Cooling and Storing:*
Allow the mixture to cool completely. Transfer the Amlaki Murabba to a clean, airtight glass jar.
Let it sit for at least 2-3 days for the flavors to mature before serving.
