Thanks for your info! I'm just start my sourdough with newly success starter (after 5th tutorial) but the dough is more sticky than factory dry yeasts. It's very frustrated because my dried yeasts bread always success for so many years...Thanks again!
Just made an eggnog sourdough that is so sticky. It was a recipe by cups and not weighed & I so wanted to add more flour, but I’m holding off & going to trust the process & add wet hands to the stretch and folds. My starter is so super active like at its peak & it’s going to gobble up the 3 cups of bread, 1 cup of eggnog, 2/3rd cup of water rather quickly I’m afraid & become wetter.
I did like 4 to 5 stretch and folds over two or three hours and it was still a sticky as it was the first time but I realized I had too much water won't do that again😅

Good to know you can do that many stretch and folds because I had this issue yesterday but turned my dough into foccaci bread 🍞

I do it after mixing the dough and when it has rested for about 1 hour

After rounds of folding the dough becomes even softer, more moist, and sticky…
I ALWAYS add flour even though it never really turns out.
