Moist sponge cake with delicious strawberry cream

    Glass 250 ml
    22 cm cake tin
    Ingredients:
    Cake:
    All ingredients must be at room temperature.
    3/4 cup of milk
    0.5 cup of vegetable oil
    4 whole eggs
    1 cup of sugar
    3 tablespoons of cocoa
    Mix until the ingredients are combined.
    2 cups of wheat flour
    1 teaspoon of baking soda
    1 teaspoon of baking powder
    Mix on low speed just until ingredients are combined
    Pour the dough into a 22 cm cake tin
    Bake for about 60 minutes (until the stick is dry) without convection, using the top-down heater in an oven preheated to 160 degrees.
    Strawberry cream:
    4 teaspoons of gelatin
    8 tablespoons of cold water
    Pour and set aside to swell
    600 g frozen strawberries
    Heat on low burner power
    4 tablespoons of sugar (you can add more)
    Heat until the strawberries are completely cooked
    Remove from the burner and add the swollen gelatin. Stir until completely dissolved
    Pass through a sieve and set aside to cool
    Leave to cool completely
    400 g of cold whipping cream 36%
    500 g of cold mascarpone cheese
    powdered sugar to taste if you decide you prefer a sweeter cream :)
    Beat until completely stiff
    Add cold strawberry mousse and beat for just a moment. Turn off the robot and finish mixing with a spatula.
    Cut the cake into 4 equal layers
    Soak 1 layer of water + vanilla sugar (1 sugar per glass of warm water)
    Divide the cream into 3 equal parts (mine is 340g) and put 1 of them
    Cover the cream with the second layer and soak it as well
    Add 2 teaspoons of beetroot extract (without spices) to the remaining cream.
    Spread 2 portions of cream. Cover it with the 3rd layer and soak it as well
    Add 2 teaspoons of beetroot extract (without spices) to the remaining cream.
    Spread the last portion of cream. Cover it with the 4th layer and soak it as well
    Chocolate icing:
    130 g of milk chocolate
    pour 100 g of hot whipping cream 30%
    Stir until the chocolate is completely melted.
    Pour over the cake and put in the fridge for about 15 minutes
    Melt the dark chocolate and pour it over each piece of cake
    Decorate with strawberries. Enjoy your meal 😊
