He is perhaps trying to talk about a symbiotic community of bacteria and yeast, which is involved in some foods like kimchi, but bacteria do not "make" yeast. Some strains of bacteria and yeast can work together to metabolize and ferment some substrates/foods.

I'm not entirely sure, but I think both of them are done by various bacteria (not yeast). Personally I prefer the cucumber with lactic acid pickling. But still the best pickled food of all is the good Bavarian Sauerkraut, i.e. pickled cabbage.

People generally don't think much about other countries outside of where they live.
