Kind of easy to understand the passenger system say you get a route that say 600 people want to go out on one day. You have 6 planes that have a compasity of 100 people. This is when your reputation come in, you can have a reputation of 75% after marketing and being eco-friendly. That means you will have around 75 people of each plane. If all planes went out at the same time you will have a route demand of 150 people until it updates.
I currently own 29 hubs, which are a mixture of both large and small. You can own as many as you want, and the size of the airport you choose depends entirely on how you intend to play the game.
If you are able to log in 24/7 short flights are much better money wise then long hauls but yea ... if you play a few times per day it makes sence to do long hauls , but I advise any starting up player to try to log in every 30m for at least the first weak and do short hauls , that is a great way to get to max craft and next tier quick (if one does not want to pay to play) .
fly a plan to mexico city. then use the reroute button, and do a test route. you don't have to fly from hubs, you can test it out and still make money and return to the hub for ACHECK

TransAtlantic flights are easy with stopovers (St Johns). Kuwait City is an excellent central hub.

yes. you can run flights between any airports. you only need hub for A-CHECK. click > on left and then HUBS at top to buy new hub
