If you want to have snow and winter sports then you want to travel in July + August. Those are the winter sport months in NZ. You would stay either in the Christchurch/ Mt. Depend a little on when in October. The early part can still be chilly and cooler, especially in the South Island. Basically October is spring with changeable weather in general. Good time for the outdoors as long as you have the right clothing and watch the weather forecast. Feb & March are generally regarded as the most stable weather conditions. Especially for anything outdoor related. The main summer holiday season in NZ goes until April, which is a wonderful time with less rain & wind as well as stunning colours.
This was a great video. It helped me to plan for a mid-March to mid-May vacation as opposed to February that I was thinking of earlier.
