He was shaking a lot because he was cheating and hoping that he didn't get caught. You notice he played Quirion Ranger's ability 2 times in the same turn while he was shaking.

It's completely unnecessary and obnoxious. It's a subtle social cue, too, that you don't trust your opponent to randomize his deck. Not that Magic players have, as a rule, much in the way of social intelligence.
Sage McLaughlin you say this but jarred boetcher, one player in the top 8, was caught and banned for cheating so it definitely happens and its happened a fair put on the open series
This is all true; shuffling your opponent's deck increases randomness and ensures there's no cheating, but I'm commenting more on the lack of care he's taking with her cards. I usually just cut my opponent's deck, maybe twice, never in the middle. The way he was man-handling her cards made me wince. I've definitely seen worse, but I think a little more respect and trust should be expected.
if you watch for a few more seconds merriam shuffled her library before she did anything else. After she shuffled merriam moved a dice so they started making sure that everything was correct on mana floating and all that, immediatley after confirming with each other that everything was good to go merriam then grabbed her deck and shuffled. Pay attention to the video before claiming someone is cheating.

they are ultra pros, and theyre probably double sleeved so I could imagine them splitting easily after shuffling all day

why did she tap the candelabra? it doesnt have a tap symbol on it besides it only says that you have to pay mana in order to untap lands.
It's from Antiquities so the text on the card does not match. It has always tapped to activate. Take look at its Oracle text for clarification.
It's what used to be called a 'mono artifact' wich requires tapping to be used. Poly artifact are used without tapping.
