    My favourite preperation of leaks is quarter inch disks, seared hard to caramelize and then use that as a plating component or or pickled

    I have been looking for this for so long, I love leeks but I could never find any recipes that respect the leek enough for what I want to achieve with it. Until today when i found this video. I want my leeks to be the star player of my dish and not some extra fluff to add to a soup or a stew. Thank you.

    I love leeks but have a question: when I've cooked them in the past, I cut most of the green area off and then slice the stalk (which is why I try to get them with lots of stalk). The green part gets boiled to make a broth and then discarded. Is there any other use for this that you can suggest? Thanks

      Sure! I've found that I can slice the tops and cook them in a similar manner to Collard Greens, but it requires some patience to get something soft and silky like a cooked leek bottom. I've also used them to wrap and steam Proteins or stuffed masa recipes like a tamale. Just Blanch the tops in boiling water for 20 seconds and then shock them in ice water to make them more malleable
