    Ingredients:
    For the Sauce:
    2/3 cup chicken broth
    3 tbsp soy sauce
    2 tbsp brown sugar
    1 tbsp cornstarch
    1 tsp freshly grated ginger
    1 tsp freshly grated garlic
    1 tbsp olive oil or sesame oil
    For the Chicken:
    500g boneless chicken breast, cut into small pieces
    Black pepper, to taste
    1 tbsp olive oil or cooking oil
    For the Vegetables:
    1 small yellow onion, chopped
    500g broccoli, chopped
    300g mushrooms, chopped
    Garnish:
    Sesame seeds (optional)
    Prepare the Sauce: In a bowl, combine 2/3 cup of chicken broth, 3 tablespoons of soy sauce, 1 tablespoon olive oil or sesame oil, 2 tablespoons of brown sugar, and 1 tablespoon of cornstarch. Add 1 teaspoon of freshly grated ginger and 1 teaspoon of freshly grated garlic. Stir until well mixed and the sugar dissolves. Set aside.
    Cook the Chicken: Season 500g of boneless chicken breast pieces with black pepper. Heat 1 tablespoon of olive oil (or your choice of cooking oil) in a large pan over medium-high heat. Add the chicken to the pan and let it cook for 1 minute without stirring to allow the first side to brown. Then stir and cook for an additional 5 minutes, or until the chicken is fully cooked through. Remove the chicken from the pan and set aside.
    Cook the Vegetables: In the same pan, add 1 tablespoon of oil and toss in the chopped onion, broccoli, and mushrooms. Stir-fry for about 3 minutes until the vegetables are tender and the onions are soft. Stir occasionally to prevent burning.
    Combine the Chicken and Sauce: Lower the heat to medium-low. Stir the sauce mixture well before adding it to the pan, making sure the cornstarch hasn’t settled. Pour the sauce over the vegetables in the pan. Bring to a gentle boil for 3-4 minutes, stirring frequently, until the sauce thickens. If you prefer a thinner sauce, you can add a bit of water to adjust the consistency.
    Finish the Dish: Add the cooked chicken back into the pan and stir to combine until the chicken is heated through and well-coated with the sauce.
    Garnish and Serve: For a final touch, sprinkle some sesame seeds on top. Serve this delicious dish with steamed rice or noodles for a complete meal!
