Yes, this become a common trick in japan to sous vide pork for large size tonkatsu like this. You can also find some other vid about other katsu restaurant now aday. It also use for tonteki (japanese pork loin steak)
i went there and there was a video about this restaurant, they just braised the beef and its tender but not so tender as I bate like a tendon that is too raw so yeah I lose like 50 gram of my 400 gram of pork, but the taste is good
