Nom!! What kind of oil are you using? I love using toasted sesame oil for fried rice.

Grapeseed oil! any neutral flavor high heat oil is fine though!

Additionally! Try putting a touch of that on at the end after cooking! Exposing sesame oil to heat can sometimes dull the nutty flavor
