Recipe🧑🍳
Ingredients:
Beef Short rib (Boneless) Diced 200g
Butter 40g 40g
Baby Squash 1 ea
Jalapenos( slices) 10g
Egg yolks 2ea
Cooked Rice 300g
Horseradish 10g
Baby Portabella Mushroom 3 pcs
Soy Sauce To taste
Mixed Marble Potatoes 5 pcs
Scallion Head 3 pcs
Deonjang sabayon
Eggs, blended 400 g
Egg yolks 160g
Unsalted butter, melted 120g
Whole milk 120 g
Salt 8g
Deonjang 30g
Xanthan gum 2g (Optional)
1.Blend together.
2.Vacuum seal.
3.Cook sous vide in 72 °C/162 °F bath until texture is consistency of light pastry cream, about 25 min.
If you don't have Sous-vide machine, you can cook in a pan with low heat till 70C and Blend again
4.Cool, then refrigerate if using later. If using immediately, pour into 1 | whipping siphon, charge with Two cartridge of nitrous oxide, and keep warm.
1. Blanch Potato in salted water
2. Pre season salt, pepper beef and sear with Butter, Potato and put beef set aside when beef get color
3. Cook rice on seared beef pan with rendered beef fat and butter. season with salt and pepper
4. Slice Mushroom, Jalapenos, Squash, Scallion head and Season with Salt, pepper and olive oil.
5. Place rice in a warm bowl and array alll vegetable
6. Lightly poach egg yolk in salted water and place on top of rice
7. Grate horseradish and dispense deonjang sabayon
