I can help you! Don't fridge it overnight as it will go quite hard. It will last 3 days out of the fridge, a week in the fridge and you can even freeze it for up to 2 months! If you fridge or freeze, just let i come back to room temperature before using it, and give it a quick whizz with the beaters to just fluff it up a little before you use it :)

you could draw a template of the ears onto some normal paper and put it under the wax paper when you pipe out the ears using the chocloate. That way they would all be the perfect size and all be identical! :D

Because of the chocolate's oil content water based colours wouldn't mix with it (oil and water can only be mixed with an emulsifier (like lecithin)). You can substitute with powdered colours - works perfectly. You can use water based colours (like gel colours) for modeling chocolate though! Hope it helps.

You could draw/print ears on paper and use them as a template under the wax paper, that way you could have symmetric ears!

Have you tried colours by Squires Kitchen? They have all kinds of colours: Gel, Paste, Powdered and special Chocolate colours.

What do you melt your chocolate in and how do you keep it from hardening while you are waiting for things to cool down?
Melt it in the microwave or on a double boiler, and to keep it from hardening, whisk every few mins :)
