So funny to see how many different ways everybody freezes corn. I have been doing it for 50 plus years. Do it on how your family taught you. Do not worry about how other people do it. You are doing your best and that's what counts. Keep up the good work. Love the video. Thanks for letting me come along. Enjoyed.

@@barbrichards6229 Hi can you explain exactly how you did the corn ? Did you use the inside hole 🕳️ of the Cake pan and just scrape the corn 🌽 off that way? I'm trying to find a better way to do it as I will blanch and freeze about two of those big bens they use on the veggie boy's and by the time I get done I'm wore completely out. I'm disabled myself so it's hard on me to do all that corn . I have cancer as well so that doesn't help matters none either . So I am having to find better ways of doing things that is easier on me.

We cut the corn off raw with an electric knife, for every eight cups of corn add to one stick of butter. Bring it to a simmer while stirring, pour on a big cookie sheet and put it in the freezer to cool. Then package in quart bags and freeze. We've been doing it this way for more than thirty years. Great job guys and keep up the food preservation... it's fun to do it together.

The natural enzymes in corn need to be inactivated before freezing to prevent both loss of color and nutrients, and flavor and texture changes. These enzymes are inactivated by a hot blanch treatment. The chilling process prevents the corn from becoming mushy due to overcooking the starch.

We always just throw the corn into brown paper bags and then freeze. Take out, let thaw and cut ends off. Put into microwave for a short while. The husks and silks just slip off. I am in Georgia where we grow sweet and field corn to eat fresh. You can just grate the corn and freeze. You don’t have to blanch. I think it sets the starch and makes it too starch tasting. A lady near me has people grate and she bags and sells in stores. Has a license to do and she certainly doesn’t blanch. Put heavy cream and butter in the corn when you cook it. Delicious.

When I was a kid, the parents were fiscally lean BUT they had an upright, Amana freezer with multiple freezing shelves picked up at an auction. We could also uppick the last of the corn in a couple of area corn fields for fresh corn at a savings. The first year my mother did some canned cut corn, frozen cut corn, plus frozen ears and half ears of corn on the cob. Every year after that we froze half ears of corn stuffed down repurposed bread sacks. All in all it went quick and easy.

I am currently watching this video and decided to get online and tell you why you are boiling the corn. You are Blanching it. Look up how to Blanch vegetables for canning or freezing. It stops the vegetable from growing and also helps it maintain the color and flavor of the vegetable, while the ice bath stops the cooking process. You should get yourself an electric knife. It is great for carving meats and many uses actually. Glad you see you are working together and hope you have a wonderful life together on the farm. Don't forget to learn something new every day and you gotta have some fun every day as well. I love watching the Veggie Boys and Stable Life so had to add your channel to my Subscriptions. /Faye from Texas. I do have to tell you I really think your veggies are bigger and prettier than any I've seen in Texas lately. I also paid $4.59 for 1 dozen eggs at the grocery store. I started freezing corn off the cob last year after I almost missed our harvest when I didn't realize it was ripe. I froze much of it but wasn't expecting much but figured something was better than losing it. However, upon defrosting it, it was so much sweeter. I couldn't believe it. Sometimes it tasted like I had added sugar but I didn't! So this year I cooked several ears every day, and we ate what we wanted, then I took the rest off the cob and put it in the freezer.

If you like cream corn and are freezing sweet corn try this my wife used to do this..clean off the corn and then wash the corn. Then taking a sharp knife cut the kernels off about 2/3's of the way down. Then turn your knife over and using the back of it scrape the fresh cut kernal area squeezing out the milk of the corn into your bowl with the rest of the corn. Do this to the whole cob. Then scoop cups full of corn and the juice into your pint freezer bags and freeze. When you go to cook it put about 1 tablespoon of butter in with the corn. I swear this is literally the best creamed corn you will ever have. I would rather have corn this way than any other way. You do not have to blanch the corn before cutting it off but. We found you can to make it easier to cut the corn from the cob. We found not blanching it did not make it appreciably easier to cut and seemed to allow more of the cream of the corn to not jell up as much making for better cream corn. Another hack for doing frozen corn is to use a canning jar funnel to help fill your freezer bags.

Sadie, how about following the produce from farm to customer. Whether individual or restaurant. Video what they do with it and share recipes. I always felt Veggie Boys channel needs to show what people do with your beautiful produce. Just an idea. Keep up the good work.

Why do you not scrape the cob after you get all the kernels off ?

Invest in a larger pot and save yourself some time and energy! Walmart has some reasonable priced stainless steel stock pots!!
PS slide the back of your knife down the cob and add it to your kernels yum!🌽🌽🌽🌽🌽
