Great book, It is written how a millennial's writes stuff compared to older generations. Straight to the point with the info of multiple books and best known practices in the field. I am relatively new to the scene but I have a great master brewer friend that has gotten me into mead making and shared all his secrets of 25 years of making mead and I have to say that this book has alot of them in it. :) Been playing around with some of the recipes so far it has been great.
Color correcting might help. Blue and purple food dye or butterfly pea blossom (depending on the pH). I used the pea blossom as a concentrated tea to color correct a milk punch to clear in the glass

Interesting recipe. I wonder If you could use seltzer carbonated water and lemon juice to substitute for the phosphoric acid when inverting the sucrose?
I'm not surprised about the color. I was hoping to learn new techniques to get rid of the colors... I've used liquid charcoal, bentonite and gelatin. Those works great to strip color. If you use liquid charcoal, add the flavorings after the racking of the sediment.
Yeah, unfortunately none of the fining agents seemed to really strip much of the color out. As I keep iterating, I will probably focus mostly on the honey and cinnamon elements for trying to get it clearer.
Vaccuum filter, pressure filter, distill, use something like bleach, centruguge - I think it will depend on how far you want to take the path to crystal clear

Sage honey from flying bee is super light in color. I wonder how light the mead would be

I wonder if you carbon filtered the seltzer before you add the syrup, if that would strip some more color.
I was also kind of wondering what would happen if I used dextrose instead of cane sugar.

This is great! Love the nostalgia fix combined with homebrewing. Acacia is such a great honey too. Yum!!

Yeah I do lemoncello and the zest adds a lot of color, the essence can be distilled though, and it comes out clear
