Put the meat mixture in a 1gal ziploc bag, flatten it out in the bag, then cut the bag off and the meat will be the perfect size to fit the weave. It is a lot easier than trying to spread it out.
Great tip!
If you put plastic wrap on top of the bacon you can smooth out the sausage to size without messing up the bacon and then flip it over onto the weave. Works for me.

14:10 A polite suggestion. If you can, stuff all that meat into a large 1 gallon plastic bag and squeeze it out so no air remains. Slice the corners and a perfect square comes out. It's also a lot easier to throw a piece of wax paper over that and roll it with a pin.
When you use a RUB as much as this recipe does, I believe it is now called Seasoning!!

the ground meat works better in a gallon ziploc flattened and smashed thin, then cut the edges of the bag and lay the square flat ground meat on there... Less work. ;) Just a tip.

If you microwave the cream cheese for 20 seconds it will spread easily and evenly.

Yo when it comes to spreding the meat put a cookie sheet in freezer after froze lay bacon on it partually freeze that lay parchment down use rolling pin use cookie sheet edges as your guide 😮😮😮😂❤

Would it work to wrap your "fatty" with string instead of using the pan? Might crisp the bacon on the bottom more. Unless it falls apart.

Run it the same way, but on a wire rack on top of a pan, that way the grease is contained and won't drip onto the bottom of your over. You could even put it in a casserole dish if you need too.
It took, a couple of tries but turned out amazing. I got a similar tray and turned it upside down on a cookie sheet bake at 400F for an hour 1 hour and a half to 2 checking with a thermometer
That looks really good. I'm going to try that with a little bit of a Texas twist maybe some jalapeno and colby jack cheese something like that along with the onion and bell pepper.
