Today, we had Chef Uno from Le Bistrot in Kobe to show us how to make Lyon-style simmered mackerel with white wine vinegar, "maquereau au vin blanc."
Ingredients
1 mackerel
5% salt (gros sel guerande) to the total weight of the mackerel filleted with its bones
1 onion
1 carrot
1 clove (per 1L soup)
1.75g coriander powder (2.5g per 1L soup)
4.9g fennel powder (7g per 1L soup)
700ml water (same as the weight of the mackerel)
5% white wine vinegar to the total weight of the soup
minced parsley as needed
lemon as needed
lime as needed
