this truly looks like a winner recipe! Will have to try this one! Paula I have been making your Monster Cookie recipe for years now for Xmas and it has become a family favorite! I add all sorts of "this and thats" in the batter to make it my own and seasonal: red/green m&ms, raisins, toffee bits, chocolate chips of all sorts and butterscotch chips- the combos are endless and fun! I have a recipe for monster cookies but they have m&ms, pecans and dark chocolate chips and peanut butter chips , oatmeal (quick cooking) and coconut (sweetened) . They're so delicious. Needless, to say they don't last long in our house. Lol...

Diana Hande Here: The best cookies( Kolacky) [koh-lah-chee]. : the cookie melts in your mouth. Ingredients 2 cup all-purpose flour 1 cup butter 1 cup(8 oz) cream cheese, 1 can Solo Fruit or poppy filling confectioners sugar Make this kolacky recipe by using a pastry blender or two knives, cut butter into flour as for pie crust. Add cream cheese, mixing lightly until dough is well combined and holds together. Divide dough into two equal portions; wrap in plastic wrap and refrigerate for several hours or overnight. When ready to bake, preheat oven to 375° F. On lightly floured board roll out one portion of dough to 1/8-inch thickness. With a pizza cutter or knife, cut dough into 21/2-inch squares. Place 1 teaspoon of fruit or poppy filling in the center of each square. Bring two opposite corners of dough together, folding one over the other to seal. Bake on UN-greased cookie sheet for 20 minutes or until lightly browned. Cool completely on wire rack. Dust with confectioners sugar before serving

Paula, your French Toast for Christmas morning was wonderful. We just love you so much here on Hill's Road in Dayton, TN. You make us feel so good. Makes me want to cook.
I personally made a couple of changes. Instead of oil, I used ghee. I like the buttery flavor it gives to cookies. I really am not a fan of peppermint, so, instead, I put melted chocolate almond bark in a piping bag and striped it over the cookies, then sprinkled with minced roasted pecans. YUM!
Hi Paula and Bobby, I use a cookie dough scoop. That makes the perfect coolie every time. That scoop makes all the cookies the same size. I am getting up early tomorrow to make four kinds of cookie dough for the freezer, then I will bake them off the Saturday.before Christmas to bag up and give to friends and neighbors.
