      i use the roccbox pizza oven. its at 800 F and bakes for 2-3 minutes

    can you please do a video on how you made that dough ball from poolish? thanks. i also have a rockbox but cant seem to get an airy crust. its too bready

    Why bother mixing semolina with AP flour for stretching? Just use semolina ?
