When I was in school in France I saw a lot of people eat like this.... I asked my chef instructor why does everyone have this bowl of lettuce, cucumbers or any light leafy or watery veggies... He said it is a great palate cleanser.... When you eat fatty food like the smoked sausages the grease tends to leave fatty deposits on your tongue and using those watery fresh veggies help cleanser you tongue so that you can taste your food better
Now I see why the women use to serve the men food back in the day (some still do) Daddy was struggling getting that rice in the plate. I'm so glad to hear he's enjoying the holidays...I'm happy that it's over...almost.
