Persimmons Pie Recipe

Do you have persimmons and want to make a good dessert? This pie, easy and quick to make, is the solution!
With a good shortbread dough, a delicious custard flavored with vanilla and of course a seasonal fruit: persimmon!
Ingredients:
1 shortbread pastry (link for the recipe: • Shortbread pastry reci... )
50cl of milk
1 tbsp. vanilla extract
2 eggs
100g of sugar
50g of cornstarch
3 persimmons
Some melted butter
Some brown sugar
Some apricot jam

Hello, thanks for posting this recipe. The pie looks beautiful. I've never made pie before. How big is this pie s dish? I need to get one. How do you take the pie out od the dish? How riped are the Persimmons?

The dish is 28 cm and has a removable bottom. That's why I was able to unmold it without damaging it.
Persimmons should be neither too ripe nor too hard.

The persimmon pie looks delicious! It appears that you used Hachiya persimmons for this recipe. I've read that they are astringent when not fully ripe and mushy. But will baking them while still firm take care of this issue? I really would like to try making this pie for Thanksgiving.

Hi! What kind of milk did you use?
If I used a nut milk, like almond milk, do you think it would not make the recipe turn out well?
Hi! I used cow milk but you can use the almand milk or other nut milk juste you will not get exactly the same texture.

No it is not necessary, you can add it moderately hot.
