This is the first time I saw an authentic momo recipe. I learnt it from a Nepali friend and they do it exactly like this. The dough should never have anything else other than maida and cold water. Loved the video.

Well, I made a couple of additions and subtractions to it, for example: 1. I didn't add sugar to the vegetables, and instead I used maggie masala to give the mixture a peppy flavour. 2. I also didn't add onions coz I was scared that the rawness of onion might hamper the taste. 3. I added paneer/cottage cheese to the vegetable mixture. 4. I fried the momos after steaming them partially. I am a beginner and it took me 4.5 hours to do it all, from chopping the veggies to frying. Oh, and I also made chutney alongside this. Extremely tired now! But the outcome was definitely worth all that effort :) Thanks a lot!

My sister made momos following your receipe and it was absolutely bliss. Your explantion is very nice, keeping the dough in fridge really works and makes it stretchy and also 30 minutes of cooking time very necessary to cook the filling and ofcourse adding butter and sugar keeps the filling moist. I made these momos today exact way .. I bet it tasted like just you get from one's fav places.. moist flavour full.. also half cup of maida will get you atleast 15-16 momos .. Also greese the pan before putting momos inside especially on the outer side .. keep it till the momos skin become translucent and you can see the filing from outside..
@Sanjeevani Bokil it's good..it means momos skin is thin but one of the drawback i felt was that it may become crusty if left for 7-8 mins under the fan ..

Flame doesn't matter when cooking something in steam. As the temperature will always be 100 degree celsius as long as there's water in the steamer no matter low or high flame.

Real secret is to add dalda ghee or desi ghee to take up it to another level

We make exactly the same here in China. We don't cook veggie stuffing and mutton. So when we boil dumplings, it turns very juicy. Great sir.
