- The mercury’s been hitting the floor lately, it’s so cold here in Delhi. That’s why I’ve been cooking different types of congee lately. This Chicken congee, very much inspired by Chinese chicken congee, turned out so well. I didn’t expect it to be so good. I was sceptical about using oyster sauce in porridge for the first time, but, it was so good.

Yes you can. Use half the amount, otherwise it will be salty

What rice did you use in it?
it is called gobindobhog rice. Short grain, aromatic. and slightly sticky.

Gobindobhog rice. It’s the easiest to cook when it comes to congee. Plus the aroma is so nice

Just noticed your style to dice carrots, what I do is cut a big pieces and then cut them diagnolly.
I learnt this from one of my favourite creators on here - Bong eats. Your way sounds good too
