    George, our supervisor and barista here at TCCC, explains why the Castillo plant is one of our favourite high quality single origin beans.
    The Castillo coffee plant - a sweet and delicate speciality - is currently the most widespread plant grown in Colombia and is mainly produced in large coffee plantations, 'Eje Cafetero'. With an astonishing Q-Grade 90 - it strikes the perfect balance between citrus acidity on the one hand, and cacao notes on the other hand.
    The variety is best prepared either as a pour over coffee, with its peach fruit acidity, and then in an espresso it is amazing with its great body and cacao notes. Expect nutty notes which land perfectly on the cacao notes. Rich and complex finished with a caramely touch. The perfect drink is feasible at both ends.
    This variety is often used as a crop by families who are victims of the conflict in Colombia, so every time you buy a cup of coffee of Castillo from us you’re helping the families out in Colombia.
