    Pink Bear: thanks for the awesome video Mazie! I recently just purchased the Lexington 500 Onyx. It's my first smoker. So far I've smoked chicken breast in addition to New York steak. For my next cook I am looking to smoke a tri-tip like a brisket because I also have a small family and don't need the quantity that a brisket puts out. I've been scouring RUclips for different videos and methods on how to get her done. I'm definitely going with the pats of butter as I am wrapping it for the second half of the cook. I'm going to season it a little bit different though. Definitely starting with course salt and coarse pepper. Putting it into the refrigerator for about an hour to help draw the juices out a bit. Then hitting it with some seasoning rub and let it sit while the smoker is getting up to temperature. Your video was very helpful and earned a sub. I'm on board now.

    The two grills you feature are both on sale this week just before black Friday. $499 for either one. The Navigator has blue tooth but I really don't need that. The Austin XL has a new and improved controller but is a little smaller. Which one would you buy today after using both? Thanks, I enjoyed you reviews and cooking instructions.

    Sorry if I missed it in the comments, but what do you think about using beef tallow instead of butter? Or a mix of the two?

      @@bbqbymazie Hi Mazie, hope your Thanksgiving was how you wanted it. My pellet grill turkey came out great. Used melted butter as a binder, with kosher salt, granulated garlic, and poultry seasoning as a rub. Stuffed the cavity with pieces of onion, celery, carrot, garlic cloves, lemon quarters, fresh rosemary, thyme, and sage, and a stick of butter. Basted every hour with melted butter combined with dried rosemary, thyme, and parsley. About 3 1/2 hours at 300. Take care of yourself my friend, looking forward to your next video.

    Pink Bear. I haven't tried this method, but will probably rotate this into one of my next cooks. I love a good brisket, but I am always looking for good alternatives to a Brisket, such as a Chuck Roast; thanks for sharing.

    “Pink Bear” Hi found your video as I’ve been obsessively practicing this technique the past week. What grade of meat did you use? It looked like Choice but not sure.
    The first time I used Choice Tri Tips from Costco and once they got to 200+ they drief out bad.
    My next time i used a Wagyu Tri Tip from a local butcher and it came out perfect. Just Salt, Pepper and Kinders seasoning. Had smoker at 225 and brought up tri tip to around 165 internal with a nice bark. Wrapped in butcher paper with butter and back in smoker at same 225 temp. Let internal temp get to around 203, did the probe test and it felt like butter. Beautiful bark. Let it rest and Boom! Perfect. 12hr cook.
    Probably gonna do another for Thanksgiving.

    Pink Bear. Always did Tri Tips on my Weber. I always liked the fatback on my tri tip. Will have to try your recipe. Can't wait to get my new Pit Boss up and running tomorrow. Gonna smoke a turkey breast for Thanksgiving with a little luck.

      You could and I use butcher paper for almost every other cook except this one. Foil works best for tri tip.
