There is a scribing trick with a washer. You place the washer against the uneven surface then then place your pencil point into the hole of the washer. Push the edge of your washer against the edge of the surface being scribed with your carpentry pencil ( sturdy nib) and follow the line down. Maybe there is a vlog on YT if my instructions are not clear. Well done. X🎉🎉🎉
Stagger the boards vertically as vertucal straight lines cause cracks. You can use a bonding agent to fill any gaps before plastering. The bonding agent is what you use to stick plaster boards on with.
I love the attitude that you are going to do this, even though you never installed plasterboard before. You have confidence that you will learn and figure it out. If I may add a helpful suggestion: just like sheet flooring (OSB or plywood), always stagger your joints. Avoid placing 4 boards adjacent to each other where the joins form a cross. No to crossroads, yes to T-junctions. Crossroad joints can be hard to get flat. Cracks are more likely and can easily track across the join.
I always enjoy watching you two. I have a question/suggestion. Just watching the episode where you are removing the moisture damaged floorboards and dismantling the old garage doors. My suggestion is buy a brazier and burn the old wood on site. You save time on nail removal, breaking down the wood to fit in the van and driving to the tip. Less work and you get to have a nice burn up in your back jardin. Do you have strict laws on fire in your jardin?

The sleeping on it, taking a step back without thinking about it can do wonders. I've turned to be grumpy in the morning too. Not happy about this, but a wonderful partner to cope with that.
While it looks like you figured an efficient way to go about, it would be better if you made your trace the width of your panel and used that "negative" distance to more efficiently cut the board, thus losing the least amount of waste possible. This negative space technique is most often used for laying tiles against walls if you'd like to research it. The only other "flaw" I see right away is that your panels don't appear to have much of a gap between them, which may cause issue with expansion and contraction. Love the vids. Keep on Keepin on.

lid of a jar put your pencil in a hole at the centre and roll the lid along the edge of the surface you want to cut
The best way to learn are to try and make errors until you get it.

IMO I would be mudding or caulking each drywall sheet edge as they are being hung, stops joints from moving or cracking later...
